Cebiche Lujoso from La Mar by Gastón Acurio

Ingredients
2 oz avocado-jalapeño leche de tigre
1.5 oz Maine lobster
1 oz crabmeat
1 oz chalaca (onions, habanero, tomatoes, green onions, cilantro, lime, salt)
Choclo, for garnish
Cancha, for garnish
Red onion, julienne, for garnish
Avocado slice, for garnish
Radish slice, for garnish
1/2 tsp smoked trout caviar, for garnish
Micro cilantro, for garnish
2 edible flowers, for garnish
6 drops olive oil
Method
In a mixing bowl, combine lobster, salt, and lime juice. On a cold plate, spoon the leche de tigre into an even circle. Top it with the lobster mixture, crabmeat, and chalaca, and garnish with choclo, cancha, radish, red onion, avocado, and smoked trout caviar.
To serve: For a final touch, decorate the dish with micro cilantro, edible flowers, and drops of olive oil right before serving. Enjoy!
