Fish Fish Chef

For the freshest seafood in town, DiningOut has always been a huge fan of Fish Fish {13488 Biscayne Boulevard, North Miami; 786.732.3124}. But now, we’re borderline obsessed! The restaurant has brought on Chef Peter Cadavieco, a Miami native previously of Red Fish Grill, the Doral Marriott (now the Trump National Doral), and Blue Point Ocean Grill at the Hard Rock in Hollywood. He has created a new and improved menu to go along with the restaurant’s already cool ambience and friendly atmosphere.

We had the chance to sit down with Chef Cadavieco to discuss his background, the new menu, tips for preparing fish, and much more. See below for the conversation that unfolded.

Tell us a bit about your background. Where are you originally from? How did you get started in the food world?
I was born and raised in Miami. It’s pretty rare these days, as most people here are transplants from somewhere else. I started cooking at an early age because my grandmother was a terrible cook. My mother subscribed to Gourmet magazine, and I just started experimenting. My mother actually forbade me to go to culinary school out of high school. So, I went to FIU and tried to do it like everyone else. But eventually, I made it back to the kitchen.

What drew you to Fish Fish?
I was looking for a small, privately owned business that I could team up with and create something special. This was a unique opportunity to do that with a beautiful restaurant with owners that care and a customer base that was eager for a breath of fresh air.

Tell us about the new menu. What changes have you made?
The new menu is a much more modern approach to seafood. It’s simple yet with complex flavors. The focal point is the fresh fish and ingredients that stand out on their own. Some of the new items include Grouper Reuben Sliders and Coconut Curry Mussels. I also introduced an authentic ceviche (pictured above)—bold, tart, and spicy.

How did your background influence these changes?
I am probably in the minority of chefs whose background really doesn’t influence their cooking. I grew up eating simple Cuban food. Honestly, if I never eat arroz con pollo again, I will die a happy man.

What do you hope to expand upon in the future?
As we grow our business, I hope to introduce more fresh catch-of-the-day items. We are also introducing a Burger Night on Sundays that will feature one beef burger and some type of seafood burger each week. The first Burger Night takes place on May 24 and will feature a Shrimp and Pork Belly Burger with watercress and spicy mayo and a Barbecue Bison Burger with housemade barbecue sauce, fried leeks, and fire-roasted poblanos.

Favorite new menu items?
It’s a toss up between the Shrimp Scampi (pictured above) and the Whole Grilled Lobster. The Shrimp Scampi is different in that we serve the whole head-on prawns. It really adds to the flavor of the dish—and the presentation is magnificent. Our Maine Lobster is truly a sight to behold: a two pound lobster split in the middle, brushed with garlic butter, and grilled whole. It’s served with a massive bed of truffle fries and Carolina-style coleslaw. I’m getting hungry just thinking about it!

What tips would you give for someone preparing fish at home?
Preparing fish is all about getting the freshest fish possible. Unfortunately, the major grocery stores are not very good with their handling of fresh fish. For cooking, I always recommend to stay clear of heavy cream sauces. Use vinaigrettes instead. They will enhance the fish’s wonderful flavor.

What do you love most about working at Fish Fish so far?
The fact that it’s a small restaurant and that I have control over the food and have the last say with it. Another great plus is that I get to interact with the guests at their tables and talk food with them. It’s a rewarding experience when you see the smile on guests’ faces after they eat your dish.

Do you have a favorite food or guilty pleasure?
My favorite food on this earth will always be foie gras. I don’t use it in the traditional sense. I actually use it more like a butter to add fat in my food. Of course, it is an indulgence. I have to say my everyday favorite food is a properly smoked beef brisket sandwich. That and some scratch-made mashed potatoes and I’m a happy guy!

He studied at The Culinary School of America, and before he knew it, he owned his first restaurant in Provincetown before bringing his magic to Miami. Rocco had been working for the Goldmans, prominent real-estate and restaurant tycoons, during his winters off from P-Town when he was introduced to Wynwood, where he made R House a home. The restaurant business is far from easy for anyone, so it is particularly impressive when women oversee everything from the books to the cooks. Liza Meli opened her very first café in Mallorca, Spain in 1993 before moving to LizaBarmeliMiami and opening the first-ever Ouzo’s Greek in 2002. Since then, Meli has single-handedly opened three other successful restaurants, all with her signature fresh Mediterranean fare, and all with an inviting, timeless neighborhood appeal. 11: Larios Turns the Beat Around with New Renovations and Menu

Garcia’s on the River really began in 1966 as a fish market before it evolved into the restaurant it is today. Mr. Garcia started his wholesale business by buying a vacant lot that had gas pumps for boating. The property operated as a gas station, but Garcia used it as storage for the wholesale market. In the ’70s it became a restaurant, and so it has been here over 49 years—the pioneer of the Miami River, now a trendy dining destination. Luis Garcia, his brother, and mother have been running one of Miami’s favorite spots for fresh seafood on the water for over 20 years, making it one of the best catches on the coast. {garciasmiami.com; 305.448.2400}

13: Heath Porter, Head Wine-O at Uvaggio
Nicknamed “Rebel Sommelier,” Heath Porter takes the snob appeal out of vinology and puts his own whimsical and knowledgeable spin on what is a true passion for wine. With a self-deprecating sense of humor, Porter points out that he grew up in a teetotaling Southern Baptist family in Cullman, Alabama, deep in the heart of Dixie. “Rednecks don’t usually grow up to become sommeliers,” he says, “especially ones from dry countries.” That said, he has garnered several awards, medals, and pins throughout his career, and has now brought his expertise to Uvaggio Wine Bar in Coral Gables. Which celebrity have you enjoyed cooking for the most?
Executive Chef Massimo Giannattasio: Having cooked for a number of high-profile clients over the course of my career, I would have to say that the most memorable experiences came from working closely with Robert Di Niro. 15: Whole Grilled Hogfish at Fish Fish
Good things don’t always come easy, which is why the rich, flaky flesh of a crispy whole hogfish might be one of our favorite things on the menu right now. Hogfish is rarer on Miami menus than other subtropical fish. One reason: It is mainly caught with a spear, which is sporty to some, a little labor-intensive to others. On clear days, divers spear Lachnolaimus maximus off the coral reefs. But when the winds pick up, spearing becomes impossible, making these tasty little creatures attractively hard-to-get. WD555 stands on its own as a lovely Mediterranean restaurant, housed in a fresh warehouse space with a lovely outdoor garden. 23: Executive Chef Erwin Mallet of Villa Azur
At the age of 12, Chef Mallet began his career at Jean Monnet High School, focusing on hospitality and catering. He maximized his talent by working in the kitchen of some of France’s top restaurants, including Pastis, Tantra, Guerite, and Maccheroni. His food is the perfect marriage of old and new techniques, and he masters every dish he meets. 24: Altamare’s New Look, New Happy Hour
It’s the summer of AltaMare Restaurant. Begin with a bratwurst upon a pretzel bun, and topped with sauerkraut. A plate of Spätzle is as fun as its name—egg noodles with shredded Coca-Cola braised short rib. Then, slice into a Rouladen—bacon, onions, and pickled, wrapped in thinly-sliced flank steak with a side of potato salad. Wynwood Kitchen & Bar (WKB)’s popular summer dining series continues its celebration of cuisine from around the world in July with a tribute to World Cup contenders, Germany. The three-month long series crafted by Executive Chef Miguel Aguilar has added to the flavors of WKB’s already robust menu by showcasing dishes from Spain in June, and concludes with Portugal in August.

Today, with a state of the art wine making facility and an advanced scientific approach in the vineyards, Castello Banfi is producing premium high quality wines with a nod to traditional wine making techniques.

Luciano Castiello, ambassador for Castello Banfi, will host this exclusive dinner presenting the top wines of the estate. The reception will begin at 7:30pm, and the dinner will follow at 8pm. I love cookbooks! My favorite one at the moment has to be “On the Line” by Eric Ripert. This particular book has great recipes, but also has a lot of information on the life of a restaurant. As a chef, I enjoy all details and stories on line cooks, equipment, wines, restaurant lingo, ingredients—you name it. Even if I were not in the business, I think I would still find them very entertaining and educational.

My favorite cookbook is called “Sven Elverfeld.” The author is by the chef de cuisine at Acqua at The Ritz-Carlton, Wolfsburg. He personally sent me his book recently and it is amazing. The book is well executed, creative, and combines all the ingredients that I like to cook with, but on a completely different level.

The last real cookbook I read was the one I found in my mother’s kitchen. It was written in Spanish, and featured very simple recipes. These recipes are what drive me to cook the way I do—beautiful, delicious comfort food, from the heart, just like my mother.
