Chili Lobster


Grab your bib, Miami! It’s time to get messy.
National Lobster Day is a thing—a big thing, in South Florida—and on Friday, June 15, Miami diners can celebrate with a great deal on some of the city’s best. Whether you like them steamed, cracked, or dipped in butter, get your lobster fix at Lobster Bar Sea Grille Miami Beach {404 Washington Avenue, Miami Beach; 305.377.2675}, which will kick-off the food holiday by launching a two-course lobster dinner special to last you the whole summer.
Affectionately called “Lobster Bar Date Night,” this deal for two lets any pair (yes, even friends!) choose one of three lobster dishes designed for sharing. The options include: Lobster Bar Sea Grille’s signature Jumbo Nova Scotia Lobster Tails with drawn butter, lemon and Honey Lobster Sauce; the 4-lb. Jumbo Lobster for Two; or The Ultimate Surf & Turf for Two with the restaurant’s 2-lb. Chili Lobster and a prime, 12-oz. NY Strip Wagyu. All specialties are served with two of three salads, either the new Caesar Salad, the Field Ripe Tomato and Barrel Aged Dodonis Feta Salad, or lastly, the restaurant’s famous “Chops” Chopped Salad. On top of that, each duo gets to choose one family-style side, like The Pure Creamless Corn Mash, Hashed Potato Tots with Truffle Blue Cheese Aioli, Lightly Creamed Baby Leaf Spinach with grated feta, or Crispy Hand Cut Fries.
The best part? While the deal honors National Lobster Day, the food and fun doesn’t end there. The Lobster Bar Date Night menu will be available everyday, from 5:30 p.m. to close, through August 31, 2018.

Shrimp Linguine from Seaspice

serves one
Ingredients
5 Jumbo shrimp, peeled and deveined
6 oz fresh linguine (can use dry, if necessary)
2 garlic cloves, thinly-sliced
1 shallot, thinly-sliced
1 oz chives, chopped
1 oz Parmesan cheese, grated
1/2 lemon, zest only
1/2 lemon, juice only
1 plum tomato, peeled and diced
Pinch of crushed red pepper
3 oz white wine
2 oz olive oil
3 oz shrimp or chicken stock
3 oz butter
Water, for boiling
Salt and pepper, to taste
Method
Add 1 ounce olive oil to pan. Sear shrimp on both sides and remove from pan. Add the remaining olive oil, garlic, shallots, tomatoes, red pepper, and lemon zest to the pan. Lightly sauté until the mixture is translucent. Deglaze with white wine and let the mixture reduce by half. Add stockade and let it reduce by half. Add salt and pepper.
If you’re using dry linguini, boil it in a saucepan of boiling salted water for 11 minutes. If you’re using fresh linguini, do the same for just 3 minutes. Add butter to the sauce mixture, followed by the shrimp, cooked pasta, lemon juice, and cheese. Stir together.
To serve: Twirl the pasta in a bowl. Add any excess shrimp and sauce. Garnish with chives, a fresh squeeze of lemon juice, and salmon roe.

Summer is almost here! And when Miami gets hotter than usual, it’s time to bring out the tropical drinks. Available now at Matador Bar, at The Miami Beach EDITION {2901 Collins Avenue, Miami Beach; 786.257.4600}, the Tierra Colada cocktail brings a taste of the Caribbean to the Magic City. And lucky for you, we’ve got the recipe, below!
Combine 1 1/2 ounces Leblon Cachaca, 3/4 ounce lime juice, 3/4 ounce carrot juice, 3/4 ounce vanilla syrup, and 3/4 ounce Coco Lopez in a shaker with ice. Shake well. Pour over crushed ice in a Collins glass. Top with a splash of Fernet Valet Liqueur. Garnish with pineapple fronds, an orchid, and nutmeg. Enjoy!


National Burger Month is halfway over, but at Pizza & Burger by Michael Mina {4441 Collins Avenue, Miami Beach; 305.674.4636}, the party’s only just getting started. Like it did last year, throughout the month of May, this favorite “backyard” restaurant at the Fontainebleau Miami Beach is debuting a new burger every week, each of which are inspired (and designed!) by a local Miami celebrity. Making this month-long party even more delicious, 15 percent of every celebrity burger bought will benefit the charity of the related celebrity’s choice.
So, who’s on tap for National Burger Month 2018?
The first week of May kicked off with The P&B Juicy Lucy by none other than the man himself, famed chef and restaurateur Michael Mina. A fan favorite at the 2018 Food Network and Cooking Channel South Beach Wine and Food Festival’s “Heineken Light Burger Bash”—and benefiting No Kid Hungry—this burger tops a butchers-blend beef patty with smoked mozzarella, tomato confit, lettuce, and basil aioli, and stuffs it all in a crusty garlic-pepperoni bun. That was followed by another name everyone knows: rapper, singer, songwriter, and producer, Flo-Rida. His Flo-Rida Burger covered a 9-oz. dry-aged blue cheese patty with heirloom tomatoes, spinach, blue cheese dressing, mango chutney, and fresh avocado, and a portion of his proceeds went towards Big Dreams For Kids.
Now at the halfway point, this week’s celebrity burger was the brainchild of three-time Emmy Award-winning chef, radio, and television personality, James Tahhan, who is most known as co-host of Telemundo’s Un Nuevo Dia. A native of Venezuela, Chef Tahhan incorporated his roots into The James burger, which is made up of an 8-oz. dry-aged patty, queso fresco, guasacaca sauce, lettuce, heirloom tomatoes, roasted poblanos, and a fried egg on a brioche bun. Available from Monday, May 14, to Sunday, May 20, 15 percent of every burger sold will benefit St. Jude Children’s Hospital.
Finally, Miami burger lovers can get excited for next week’s collaboration with DJ IRIE, who will round out National Burger Month with his own The IRIE burger. Proceeds from this burger—which has a crispy chicken patty, a jalapeño and green chili cheese sauce, fresh guacamole, lettuce, and tomatoes—will benefit The Irie Foundation, an organization dedicated to positively impacting the lives of South Florida’s at-risk youth. This final burger will be available from Monday, May 21, to Thursday, May 31.  
All celebrity burgers offered during National Burger Month are priced at $25. Pizza & Burger by Michael Mina is open daily for dinner, from 5 p.m. to Midnight, and opens for lunch at Noon on Fridays, Saturdays, and Sundays.

You can’t leave without dessert, so choose from Masa’s Chocolate Cake or Raspberry and Champagne Granite, and pair it all with a drink from Azabu’s extensive sake and Japanese whiskey menu.

Seaspice

Go to Seaspice’s usual Sunday brunch, and if you’re a mom, enjoy free, unlimited champagne for two hours. On top of that, the restaurant will get the party started with a live band, performers, giveaways, a photographer, and a fun photo booth so families can remember their special day with Mom.

Cantina La Veinte

Whether you sit outside, right on the water, or reserve a table in the restaurant’s elaborate dining room, families can enjoy a Mexican-driven buffet feast with Chilaquiles, Fideos Secos, homemade Enchiladas, Cochinita, Shrimp Aguachile, fruit, omelets, and desserts like Mini Churros and Tres Leches. Every mom will get a complimentary glass of Prosecco, and after that, sip on reduced-priced bottles of Veuve Clicquot Brut (they’re just $50!) or bottomless margaritas.

Chefs Lau and Tsui have created a special Mother’s Day menu with family-style plates like Glazed Prawns with Walnuts, Chicken Satay, Little Dragon Soup Dumplings, signature desserts, and more. Just for the holiday, the chefs will perform a special edition of their famous noodle-pulling show, and all guests of the restaurant will get to sip on a glass of bubbly from MR CHOW’s champagne cart.

Brunch 11:30 a.m. – 3 p.m.; dinner 6 p.m. to 11 p.m.
Here, you have two ways to celebrate Mom: with a buffet brunch or a three-course, prix-fixe dinner. If you choose the former, nosh on brunch plates like Nutella French Toast, Belgian Waffles, or Grilled Swordfish with Papaya Salsa; comb your way through raw bar, charcuterie, paella, and classic breakfast stations; and peruse the Viennese Table with desserts like Key Lime Tarts, Bread Pudding, and more. The three-course dinner includes dishes like Alaska King Crab Legs with artichoke purée and mussel emulsion, Bouquet of Artisan with cucumbers and tear drop tomatoes in a balsamic vinaigrette, Prime Beef Tenderloin and Caribbean Lobster with potato soufflé and lobster béarnaise, Pan Seared Wild Salmon with corn tamales and roasted tomatoes, or Braised Lamb Shank with a celery root purée and rosemary port jus. Celebrate Dia de las Madres in South of Fifth, with authentic, traditional Mexican fare at Lolo’s Surf Cantina. Perfect for every type of mom, the special brunch menu will have everything from a Breakfast Burrito with eggs, bacon, rice, and beans, to Challah French Toast with spiced cinnamon sugar and dulce de leche, Butterscotch Pancakes, an Egg White Frittata, and a smoked salmon plate called The Brooklyn. To really celebrate, Lolo’s will also offer a special Mother’s Day cocktail, La Reina, made with coconut rum, lychee, Cocchi Americano Rosa, and lime.

This Asian restaurant spares no expense when it comes to a buffet. In addition to live jazz, guests will get unlimited Louis Roederer Champagne and Bloody Marys, and have access to every food station you could imagine: a rotisserie station featuring Roasted Strip Loin Au Jus, a seafood station with Alaskan King Crabs Legs, a sushi station, a dim sum station, an Indian station, an Asian station with Pad Thai Goong Sod and Red Pork Curry, and even a kids station. The dessert station at The Setai, Miami Beach never disappoints! Expect every kind of cake, tarte, chocolate, sweet, and even a liquid nitrogen ice cream station.

Just in time for the royal wedding, the Mandarin Oriental, Miami {500 Brickell Key Drive, Brickell; 305.913.8288} has released a nuptials-inspired cocktail: Something Blue. Available only during the month of May, try it at MO Bar + Lounge, and on May 19, make it at home as you watch Prince Harry and his American princess say “I do.”
Here’s how it’s made:

Shake 1 ounce London Dry Gin, 1/2 ounce Maraschino Cherry Liqueur, 1/2 ounce Blue Curacao, 1/4 ounce lemon juice, and 1/4 ounce honey syrup in a shaker with ice. Strain into an empty shaker and discard ice. Add 1 egg white. Shake vigorously. Strain into a coupe glass. Garnish with an edible flower. Enjoy!


Just in time for Miami’s warmer months, Matador Bar, at The Miami Beach EDITION {2901 Collins Avenue, Miami Beach; 786.257.4600}, has come up with a cool new bubbly cocktail, Dos Orejas. Perfect for brunching with the girls—or, who are we kidding? Saying “cheers” to the royal wedding—this gin concoction promises to put a little pizazz in your day-drinking game. Check out the recipe, below!
Combine 1/4 ounce St. George Raspberry Brandy, 1 ounce Tanqueray Gin, a splash of Pernod Absinthe, 1/2 ounce lemon juice, 1 ounce coconut water, and 3/4 ounce simple syrup in a shaker with ice. Pour into a champagne flute and top with Moet & Chandon Brut Champagne. Garnish with a frozen raspberry. Enjoy!

Sashimi Salad with Matsuhisa Dressing

serves four

Ingredients

Sashimi Salad:
Sea salt
Freshly ground black pepper
7 oz fresh tuna fillet (can also be made with shrimp, lobster, crab, salmon, or yellowtail)
5 Tbsp and 1 tsp Matsuhisa Dressing (recipe below)
2 oz assorted salad vegetables
Matsuhisa Dressing:
3/4 c onion, finely chopped
2 Tbsp and 2 tsp soy sauce
2 Tbsp and 1 tsp rice vinegar
2 tsp water
1/2 tsp granulated sugar
Pinch sea salt
1/4 tsp powdered mustard
Pinch freshly ground black pepper
4 tsp grapeseed oil
4 tsp sesame oil
Method
For the dressing: Combine all ingredients, except the oils. When the salt is fully dissolved, add in the oils.
For the salad: Preheat a grill or broiler. Sprinkle a little sea salt and black pepper on the tuna. Briefly sear the tuna until its surface turns white. Plunge the fillet into ice water to stop it from cooking any further. Shake off the excess water.
To serve: Pour the Matsuhisa Dressing into a serving dish. Arrange the salad vegetables in the centre of the dish. Cut the tuna into five to seven slices and place them around the vegetables.

Scallop Tiradito

serves three
Ingredients

3 scallops

1/2 cucumber
Coriander leaves
Chili paste
Salt flakes
2 tsp yuzu juice, freshly squeezed
1 Tbsp and 1 tsp lemon juice, freshly squeezed
Method

Extract the scallops from their shells, remove the innards and beard, and take off the frilly membrane. Aim to cut each scallop across its depth, into three slices (depending on its size). Slice the cucumber into very thin discs.
To serve: Carefully arrange the cucumber slices in the middle of a serving plate. Surround the cucumber with up to seven scallop slices. On each slice, place some coriander leaves and a little dollop of chilli paste, then sprinkle with salt flakes. Make a yuzu lemon sauce by mixing the yuzu and lemon juices, and carefully pour it around the scallops.

Au Jus from Morton’s The Steakhouse

makes one cup
Ingredients
1 1/4 c water
1 c reconstituted store-bought veal demi-glace
2 1/2 tsp commercial beef base
1 1/4 tsp commercial chicken base
1/2 tsp whole black peppercorns
1/8 tsp garlic powder
1/8 tsp dried thyme
1 bay leaf
Pinch of freshly ground white pepper
Method

In a medium saucepan, combine water with demi-glace, beef base, chicken base, peppercorns, garlic powder, thyme, bay leaf, and white pepper. Whisk well. Bring to a boil over medium-high heat. Cook at a boil, uncovered, whisking occasionally, for about 25 minutes or until glossy and smooth. Strain through a chinois or fine-mesh sieve into a metal bowl. Discard the solids. Let cook, then cover and refrigerate for at least 1 hour until chilled. Scrape off any fat that has congealed on the surface.
To serve: Use right away or transfer to a lidded container and refrigerate for up to 3 days. Serve with a porterhouse steak.
