Tuna & Watermelon Tartare with Raspberry Chimichurri, Shallot & Lemon from Giorgio Rapicavoli

serves four to six
Ingredients
16 oz sushi-grade tuna, diced
2 c seedless watermelon, diced
1 pt red raspberries, mashed
1/4 c shallots, minced
2 oz extra virgin olive oil
1 oz red wine vinegar
1 lemon, zested
4 radishes, thinly sliced, for garnish
Table salt, to taste
Maldon Sea Salt Flakes, for garnish
Method
In a bowl, combine the raspberries, shallots, olive oil, vinegar and salt. Let rest for 30-60 minutes. Set aside and refrigerate until ready to use.
When ready to serve, combine the diced tuna and watermelon. Add the tuna mixture to the raspberry chimichurri mixture. Season with salt, to taste.
To serve: Scoop a pile of tartare in the center of a chilled bowl. Drizzle with fresh olive oil and finish with lemon zest. Garnish with radish slices and Maldon Sea Salt Flakes.

Coconut Salmon Ceviche from Seaspice

serves two
Ingredients
Coconut Salmon Ceviche:
4 oz salmon
4 Tbsp Boiron coconut purée
1 Tbsp Thai Vin (recipe below)
5 cilantro leaves
1 Tbsp scallions
1 tsp lemongrass dust
1 tsp fleur de sel
1 Tbsp tamari
1 Tbsp Pineapple and Lime Mix (recipe below)
1/2 coconut shell
Micro cilantro, for garnish
Fried Garlic, for garnish (recipe below)
Bamboo leaves, for plating
Thai Vin:
1 qt lime, juiced
1 c fish sauce
16 oz brown or palm sugar
20 Thai chilis, dried
Pineapple and Lime Mix:
1 pineapple
3 limes
Fried Garlic:
2 1/2 garlic cloves
Method
For the Thai Vin: Blend ingredients together for three minutes. Strain and chill.
For the pineapple and lime mix: Make a brunoise by cutting the pineapple into 1/4-inch chunks. Zest the limes and mix with the pineapple.
For the garlic: Clean the garlic cloves. Using the “pulse” setting, chop the garlic in a Robot Coupe. Fry at 350℉ until golden brown. Lay on a napkin. If you have one, store fried garlic in a dehydrator at 145℉.
For the coconut ceviche: Mix the coconut purée and Thai Vin. Add scallions, pineapple, lemongrass, cilantro, tamari and salmon. Mix well.
To serve: Take a scoop of crushed ice and put it in the middle of a medium-sized bowl. Split a bamboo leaf in half and place it in the center. Top with the half coconut shell, hollow side facing up. Fill shell with the salmon and Thai Vin mixture. Garnish with prepared garlic and micro cilantro.

Seafood lovers, rejoice! Now in its 15th year, the Deering Seafood Festival will return to Miami this Sunday, March 31, from 10 a.m. to 6 p.m. Taking place at The Deering Estate {16701 SW 72 Avenue, Palmetto Bay; 305.235.1668 ext. 263}, this popular event annually attracts nearly 10,000 people for good seafood, cold drinks, fun activities, chef demonstrations, kids games, dancing, parades, and of course, a stunning day in charming Palmetto Bay.
Dubbed “Best Event of the Year” by the Greater Miami Festival and Events Association for the past two years, and an eight-year veteran of BizBash Magazine’s “Top 10 Events” list, this year’s Deering Festival is sure to be another hit.
Here are 9 reasons not to miss the 15th Annual Deering Seafood Festival:
There will be more food and drink than you can consume.
Head to Seafood Alley presented by Golden Rule Seafood, and you’ll find everything your seafood-loving heart could ever crave: like popular snacks and dishes from Golden Rule Seafood, Catering by Les, Don Camaron Seafood Grill & Market, Paella Party, Popo’s Seafood, Rodbenders Raw Bar & Grill, Sports Grill, the Antigua & Barbuda Association of South Florida, and more. Wash it all down with an ice-cold Landshark Lager, a frozen drink, a soda, bottled water, or something else, and make sure to stop by the Chill-N, Gringa Flan, or Wendy’s Chocolates booths for a sweet ending.
You’ll learn how to make tasty seafood dishes from Miami’s best chefs.
Real foodies can gather in Deering Estate’s historic courtyard, where the Chef Demonstration Tent presented by Mercedes Benz of Cutler Bay will feature live cooking seafood demonstrations from five popular Miami chefs. Thanks to a partnership with Johnson & Wales University College of Culinary Arts, a sixth presentation will highlight the winner of the school’s Deering Seafood Competition. This year, the featured chefs include: Angel Leon (Executive Chef, Seaspice), Giorgio Rapicavoli (Owner/Executive Chef, Eating House/Glass & Vine),  Stanley Miller (Executive Chef, Lightkeepers at The Ritz-Carlton Key Biscayne, Miami), Demetrios Pyliotis (Executive Chef, Poseidon Greek Boutique Restaurant), Abel Veulens (Executive Chef, Isabelle’s Grill Room & Garden), and lawyer-turned-chef Utpal Dighe (Winner of Johnson & Wales Culinary Competition). Following each presentation, 100 attendees will get a copy of the chef’s recipe, a sample of the prepared dish, and the opportunity to participate in a Q&A with each chef.
There will be a Bahamian Junkanoo parade.
…AND Virgin Island stilt walkers. It’s a really fun part of an already-fun day!
Your kids will be entertained, too.
Worried your kids will be bored? Don’t be. The Deering Seafood Festival offers activities that are both fun and educational for children of all ages, like: Deering Discovery Cove (where children can experiment and explore the wonders of nature) and the Lil’ Shrimp Kids Zone, which has inflatables, creative activities, and booths with kid-friendly food.
You can bike there for free.
If it’s a beautiful day in Miami, there’s no reason not to travel to the festival by bicycle. For those that do, a free bike valet will be offered by the Green Mobility Network. If you get too tired, just catch the free Park and Ride, which will shuttle guests to and from Westminster Christian School and Palmetto Bay Village Center to The Deering Estate for free.
Mr. Nice Guy will be there.
But that’s not all. On the main stage, find continuous live entertainment from Visions Band FL, Caribbean Crew, and like we said, everyone’s favorite local band: Mr. Nice Guy.
It’s not just about food.
When you’re full (yes, it will happen), wander around and see what else the festival has to offer. Artists Lane will have paintings, photography, crafts, and jewelry by local artisans for sale. For those looking for something more active, try the rock-climbing wall or take a Pelican Skipper pontoon boat ride to Chicken Key.

Proceeds from the festival benefit the Deering Estate Foundation, and are used to support environmental education, preservation, and programming at The Deering Estate and throughout South Florida.

The Deering Estate preserves the 1920s-era Miami estate of Charles Deering—a Chicago industrialist, early preservationist, environmentalist, art collector, philanthropist, and the first chairman of the International Harvester Company. Here’s how it’s made:
Over ice, combine 1 ounce Hendrick’s Gin, 1/2 ounce Solerno Blood Orange Liqueur, and 1 1/2 ounces Finest Call Blood Orange Sour Mix. Top with soda water. Garnish with a dehydrated lemon slice.

Is there ever a bad time for chocolate? We don’t think so, and thankfully, the culinary team at Fontainebleau Miami Beach {4441 Collins Avenue, Miami Beach; 305.674.4641} agrees.
After a special collaboration with the world-renowned French chocolate brand, Cacao Barry, the hotel’s Executive Pastry Chef, Brielle Fratellone, was able to visit the French chocolatier’s lab in France and customize a chocolate recipe just for Fontainebleau. The result was FONTAINEBLEAU SAPPHIRE NOIR™: a dark chocolate named for the careful effort and perfect crafting needed to create rare jewels, much like this recipe. And with it, Fontainebleau Miami Beach is now the only hotel in the United States to retail their own, customized chocolate recipe.
To create this dark chocolate, Fratellone tasted over 20 cocoa masses and chocolates from different countries, and played with lots of recipes until she achieved the perfect marriage of acidity, sweetness, and bitterness. In the end, Sapphire Noir uses cocoa beans from The Dominican Republic, Ecuador, and Mexico, and has an intense cocoa taste with hints of yellow fruit and woody notes. Available to guests throughout the resort, Sapphire Noir can be enjoyed as a chocolate bar, as signature pralines, or in a petit gateaux sold at Chez Bon Bon. Diners will also find it in select desserts on the menus at StripSteak by Michael Mina, Scarpetta by Scott Conant, and Hakkasan.

Guests will have the opportunity to taste three wine varietals from different continents, each paired with Fontainebleau Sapphire Noir. In this tasting, guests will learn how each wine complements the dark chocolate. Classes take place every Monday and Wednesday, from 6 p.m. to 7 p.m., starting March 18, 2019.
