New Impero Burger


Listen up, burger fans! National Burger Month is coming to a close, and to end it in style, one of Miami’s hottest burger joints—Pizza & Burger by Michael Mina {4441 Collins Avenue, Miami Beach; 305.674.4636}—is bringing in a Fontainebleau favorite: Scott Conant. For this week only, the celebrity chef and restaurateur behind Scarpetta {4441 Collins Avenue, Miami Beach; 305.674.4660} is putting his New Impero Burger on the Pizza & Burger menu… and he’s giving 15% of the sales to Keep Memory Alive, an organization committed to improving the lives of patients and families dealing with Alzheimer’s, dementia, multiple sclerosis, and various brain disorders.  
Following a month of celebrity burgers that includes Grown’s Signature Salmon Burger by Shannon and Ray Allen, the Fork & Knife Burger by Food Network superstar Robert Irvine, and the IRIE Burger  by DJ IRIE, Scott Conant has created a burger inspired by the Italian flavors he has become famous for mastering. Taking diners on a culinary tour of Italy, this burger tops a double dry-aged patty with pickled mustard seed sauce, fontina, lettuce, tomato, and truffle aioli.

Bon Bon St. Germain Spritz

Bon Bon St Germain Spritz
The perfect dessert cocktail, this fizzy drink fuses St. Germain liqueur, lemon juice, strawberry purée, and Prosecco, and tops it all with sweet cotton candy.

The queen of all cocktails, this one mixes papaya, lemon juice, Moet rosé, and Mancino Rosso vermouth for a royally delicious drink.

Polpette In Umido


Who’s ready for summer? Quattro Gastronomia Italiana {1014 Lincoln Road, Miami Beach; 305.531.4833} certainly is. To kick-off Summer 2017, this Italian hotspot has launched a special summer lunch menu (for just $25 per person!) that includes two courses plus dessert. Come hungry… and leave in a food coma.
Available on weekdays from Noon to 6 p.m., this prix-fixe menu by Executive Chef Luciano Sautto promises all of the classics, at a price anyone can afford.  For the first course, choose from plates like Tuna Pizza with tuna carpaccio and spicy mayo, Insalata Di Misticanze E Caprino with mixed greens and crispy goat cheese, and Polpette In Umido, meatballs doused in San Marzano tomato sauce and topped with buffalo mozzarella. Then, for the main course, guests can really indulge. If pasta is what you crave, choose from Penne Primavera with organic garden vegetables, or go for the hearty Spaghetti Alla Carbonara topped with egg yolk, guanciale, Pecorino Romano and a touch of cream. The Cotoletta Di Pollo paired with an arugula and cherry tomato salad is a safe choice, while the Dentice Alla Griglia, a grilled red snapper filet with romesco sauce, is as fresh as the ambiance is lively.
And since warm summers are something to celebrate, pair your Lincoln Road people-watching with some chilled Dolci, a selection of home-made gelato. And then go to the beach—it is summer, after all!
This prix-fixe lunch menu is available for $25 per person, excluding tax and gratuity. The a la carte menu will also be available.

Raspberry Macaron

Ingredients
Macaron:
1 cup  almond flour meal
1 cup powdered sugar
1/3 cup egg whites, plus a separate 1/2 cup egg whites
Red food coloring
1 cup granulated sugar, plus a pinch for the egg whites
2/3 cups water
Raspberry Jam:
1 kg  raspberry purée
3 1/2 tbsp granulated sugar
2 tsp pectine   
Method
For the macaron: Preheat the oven to 350℉. Prepare your pastry bag, parchment paper, and cooking sheet.  Sift the almond flour and powdered sugar in a large bowl and whisk together. Pour 1/3 cup egg whites and mix it all together with a spatula. Add the red food coloring until you get your desired shade of red.
In a stand mixer, beat the remaining 1/2 cup egg whites. Put 1 cup granulated sugar and 2/3 water into a small saucepan, and heat over medium-high heat until the syrup reaches 203℉. Let the syrup continue to cook. At this point, add a pinch of sugar to the egg whites. Turn on the mixer at medium speed and whip until you see soft peaks. When the syrup reaches 248℉, remove the pan from heat. Turn the mixer to medium-low speed and slowly add the syrup to the egg white mixture. Increase the speed and whip for 5 minutes until the mixture is cool.
Fold 1/3 of the egg white mixture into the almond mixture, then continue adding the egg whites a little bit at a time. Transfer the mixture to the pastry bag and pipe the macarons onto the cooking sheet. For best results, lift up the cooking sheet and tap the bottom of the pan to spread the batter evenly and smooth any peaks left by the pastry bag. Bake for 9 to 12 minutes.
For the jam: Combine 1 kg raspberry purée, 3 1/2 tbsp granulated sugar, and 2 tsp pectin in a saucepan and heat until the jam mixture boils. Put the jam mixture in the freezer for 2 hours. When the jam is cold, put the mixture in a blender and mix until you get the perfect jam consistency.
To put it all  together, fill the pastry bag with the jam mixture. Remove the macarons from the pan. Starting in the center of one macaron, pipe the jam and top with a second macaron. Refrigerate for 3 hours before serving.


Expert mixologist Attila Kocksis wanted to give “tea time” an elevated experience, so he turned it into the appropriately-named High Tea cocktail and served it at Seaspice {422 NW North River Drive, Miami; 305.440.4200}. Beautiful in its presentation, this posh drink uses Earl Grey tea and Cardamom-infused Bombay Gin to create a smoothly refreshing zing… one that’s even worth keeping your pinky up for.  
Get the recipe, here:
Start by infusing Bombay Gin with Earl Grey tea leaves and cardamom. Pour 1 1/2 ounces the infused Gin, 3/4 ounces simple syrup, and 1/2 ounce fresh lemon juice into a shaker and shake vigorously. Rim a martini glass with cardamom and brown sugar. Strain the shaken contents into the martini glass and garnish with a lemon twist. Enjoy!

Guava and Citrus Tart


Every month, Miami Beach’s sexiest restaurant and lounge, Villa Azur {309 23 Street, Miami Beach; 305.763.8688}, launches a new ingredient-focused tasting menu—and this May, it’s all about staying local.
From now through May 31, haute diners can head to this swanky Mediterranean restaurant and lounge for a three-course Floridian menu inspired by the flavors and ingredients of The Sunshine State. Pairing every dish with the perfect wine, Executive Chef Erwin Mallet has come up a tasty menu that starts with your choice of one appetizer: either Florida Key Shrimp with corn puree, radish, and pickled cucumber from Belle Glade; or a Tomato Tart with cherry tomatoes from Bonita Springs, crispy brick, burratina from Ft. Lauderdale, Chantilly, and basil coulis. Following that, the main dish is Roasted Grouper with sautéed and caramelized sprouts from Miami, crispy kale from Port Lucie, and orange dressing from Belle Glade. Finally, the meal ends on a sweet note with a Guava and Citrus Tart made with fruits from Homestead and Belle Glade.

What to order: The Wood Oven Empanadas with hand-cut Prime filet and llajua sauce are a fan favorite.

What to order: They’re all amazing, but meat lovers should get The Pork Store pizza with soppressata, spicy pepperoni, pancetta sweet peppers, and bocconcini.
For something really different…

Why you’re there: Helmed by Jeff McInnis and Janine Booth, this Southern-inspired spot uniquely fuses Cantonese Dim Sum with American comfort food.
What to order: Since it’s something different, order a couple things off the restaurant’s dim sum carts. The Braised Short Rib Dumplings with crispy onion rings and black vinegar, or the Tar’d N’ Feathered Chicken Wings. The latter douses crispy fried chicken lollipops with sticky hot sauce, ranch dressing, and celery.
