Chef Ivy Chen

Chef Ivy Chen

Taiwan sits between southeast Asia, China and Japan—three powerhouses of culinary tradition. While the island’s cuisine draws from them all, it still shines with its distinct taste. “We have our own unique flavor. The local ingredients make it ours,” says private chef Ivy Chen, who runs hands-on cooking classes out of her cozy, Taipei apartment. Having mastered the art of Taiwanese food with nearly 20 years of teaching experience, two cookbooks, and countless media appearances (including BBC’s “Ainsley Eats the Streets” with British celebrity Chef Ainsley Harriott), Chen is the go-to expert for her nation’s cuisine.
But what is Taiwanese food? “There are lots of Chinese dishes and influences,” says Chen, “but here, it’s lighter and brighter with more fresh vegetables and seafood. Plus lots of herbs, such as Taiwan basil, cilantro, and shallots.” Braised and minced pork over rice, a classically Taiwanese dish, is lightened up with a topping of pickled cucumbers or preserved yellow daikon. Oyster omelettes finished off with a gooey, sweet potato starch pancake are a snack favorite combining the island’s bounty of sea and soil. Deep-fried taro balls with salt-cured eggs and pork floss, rich beef noodle soups, and steamed bun sandwiches of pork belly, greens, peanuts, and cilantro (the “Taiwanese Big Mac”) are other favorites of Taipei’s famous night markets.
Chen says the country’s signature dish, however, is Three-Cup Chicken—a comfort food that derives its name from a Chinese folk recipe calling for “one cup each of sesame oil, soy sauce, and rice wine.” But unless you’re planning to cook a lot of chicken, that ratio will probably result in an oily mess. The Taiwanese version is lighter and brighter—but no less comforting.
Three Cup Chicken

Stir-frying in the basil and chiles right before serving

Three-Cup Chicken From Chef Ivy Chen

serves three
Ingredients
2 Tbsp vegetable oil
6 slices ginger, unpeeled*
6 cloves garlic, peeled
1-1/2 lbs bone-in chicken legs, thighs, and wings, chopped
4 Tbsp rice wine
4 Tbsp soy sauce
2 tsps sugar
1/4 tsp black pepper
1/3 c water
1 Tbsp sesame oil
(black sesame oil is best)
1 handful Thai basil
1 red chile, chopped
cooked white rice, for serving
* No need to peel the ginger; just give it a good scrub. It’s used mostly as an aromatic.
Method
Heat the vegetable oil in a wok until shimmery, and then lower the heat to add the ginger and garlic cloves. Cook until golden; remove and set aside.
Add the chicken to the infused oil and increase heat to medium-high. Fry the chicken until golden, and then add the rice wine, soy sauce, sugar, black pepper, and water and the reserved ginger and garlic. Bring to a boil and then cover the wok and reduce heat to low. Simmer for 30 minutes, stirring occasionally. When the chicken is cooked through, simmer until the sauce has thickened and the wok is almost dry. Increase heat to high and add the sesame oil, Thai basil, and red chile. Toss for 10 seconds until the basil is just wilted and serve with white rice.

Gerard Bertrand

Charming French winemaker Gérard Bertrand recently hosted a wine pairing dinner at Joe’s Stone Crab, promoting several of his varietals, including the effervescent Code Rouge. Bertrand’s impressive wine footprint stretches across the South of France, with an emphasis on biodynamic farming. The former rugby player is the perfect ambassador for his 20-plus-year brand and, for one evening, he brought a taste of the South of France to Miami.

What attracts you to the Miami market?
I love Miami because I think it’s one of the most exciting cities in the world. I love the lifestyle of Miami. For us, it’s very important to share the lifestyle of Saint Tropez with our guests at the best restaurants, nightclubs and lounges. Miami is an attitude. It’s cool, relaxed, and people like to have fun. They like to make parties. They also like to make food and wine pairings. Our portfolio of wine answers all of these needs because we have sparkling wine, organic whites, red blends, and rosé, of course.

Why did you choose Joe’s Stone Crab for your wine dinner?
Joe’s Stone Crab was the first restaurant we entered in Miami seven years ago. Plus, I think our rosé pairs very well with the stone crabs. The color of the rosé and the color of the crabs matches very well together. And the taste is good with the crab and the cocktail sauce.

How does Miami remind you of the South of France?
Saint Tropez is a small village that becomes big. Miami is a big city. You can’t compare both. For me, the attitude of Miami Beach is Collins Avenue. When you walk on Collins Avenue, it’s a very long avenue with the best hotels and fashionable people.

Where can we buy your wines in Miami?
We are at Joe’s Stone Crab, the Delano, Surfcomber, Faena, Fontainebleau, and Juvia. We are also located across the country, in all of the states.

Gerard Bertrand Wine

Why are you so committed to biodynamic farming?
Organic and biodynamic farming is not a trend for me. It’s a priority and commitment for 15 years now. We are the leader in the world for organic and biodynamic farming. We want to leave a better planet for our children. We want to save the planet and fight against global warming. Plus, this type of farming is better for the quality of the wine. With biodynamic farming, you have more freshness, more minerality, and better acidity and vibrancy. The potential for the aging of the wine is better, too.

What’s the difference between organic and biodynamic farming?
Organic farming is a technique. Biodynamic farming is a philosophy. For biodynamic farming, we only use the lunar calendar and the planetary calendar. We care about the connection between the planets and earth. We spray homeopathic recipes on special days, especially on fruit days and flower days. We follow the principles of Rudolf Steiner, who created the biodynamic way in 1924. All of our Estate wines are biodynamic. We have more than 1,000 acres converted to the biodynamic agriculture, and we are number one by far. The DNA of the company is excellence of quality, organic and biodynamic farming, and to deliver the lifestyle of the South of France. When you drink a glass of wine, it’s to have fun and talk with people and enjoy life. When you start to drink, you stop to fight.

You have been involved in the winemaking process since the age of 10. What an amazing journey.
I have written a book to explain my history in the winemaking industry called Wine, Moon and Stars. I spent 18 months writing the book to explain my philosophy and commitment to the South of France. We have great expertise in winemaking. Plus, we love food and wine pairings. We want to deliver the character of the terroir. It’s more important than style. Style is just the beginning. In my book, I explain the “Pyramid of Sense.” The pleasure is the minimum you need to provide to your consumers. The pleasure is the eyes, nose, and mouth. After that, you have the taste. The taste is the throat. You move from the mouth to the throat. After that, you have the emotion. You move from the throat to the heart. It’s a spirit communion when you feel this emotion. When you discover that, you can thank God because this is something unique. On top of that, you have the message. The message is the brain. The message comes directly from God. It’s like Sting’s song, “Message In A Bottle.” With the Clos D’Ora wine, it’s a meditation wine. It’s a wine that delivers a message of peace, love, and harmony. I created this wine and winery with these feelings. It’s very important to me.

Happy dining!

There’s no denying that the Fontainebleau’s summer pop-up, Pizza & Burger by Michael Mina {4441 Collins Avenue, Miami Beach; 305.674.4636} has been a hit. (It shouldn’t be a surprise either, as its inventively-topped farm-fresh pizzas and burgers are unlike anything guests of the haute hotel have ever tasted there before.) Originally created by nationally-acclaimed star chef Michael Mina to temporarily replace his namesake restaurant, Michael Mina 74, this relaxed backyard-BBQ pop-up isn’t going anywhere. And while we’ll all miss the devilishly-decadent Michael Mina 74, we can’t hide our excitement that Pizza & Burger is here to stay.

group-cocktails-1

Cocktails at Pizza & Burger

Inspired by Michael Mina’s own childhood summer BBQs, Pizza & Burger was created as a place for friends and family to grab a casual (handcrafted) cocktail, share a pizza (topped with lobster), or get a burger (maybe a Cuban-inspired one topped with crispy potatoes and chorizo?). If it isn’t obvious already, your everyday staples on the menu are anything but ordinary, but they’ll pack a punch that’s sure to keep you coming back for more. Plus, to keep the vibes every bit as casual as a summer BBQ, expect tables with games on them, upbeat music on repeat, and a lively atmosphere made up of locals and hotel guests alike.

Of course, at the heart of this must-try spot is the food. Led by newly appointed Chef de Cuisine, Timothy Elmore, Pizza & Burger’s select menu is sure to impress. Start your meal with a local beer or a Stiggin’s Cup with Pimm’s #1, Bombay Gin, Plantation Rum, pineapple, lemon, and ginger, or starters like smoked, slow-cooked honey Wings or Lobster Corn Dogs. For something a little healthier, design your own Market Salad by choosing up to ten items from a list of organic greens, vegetables, fruits, cheeses, nuts, seeds, croutons, dressings and vinaigrettes, and add-on proteins like Gulf prawns, King salmon, grilled skirt steak or free-range chicken.

Wings at Pizza & Burger

Wings at Pizza & Burger

And while large plates like the Double Cut Pork Chop with apple butter and braised mustard greens are every bit as delicious as they sound, the heart of the operation is obviously the pizza and burgers. With plenty of mouthwatering options to choose from, our favorite burgers are the classic MM74, a dry-aged burger with double-smoked bacon, American cheese sauce, lettuce and “secret sauce,” and the vegetarian alternative, The Hippie Chick, with marinated and grilled eggplant, tomato jam, crispy zucchini, red onion labneh and Haloumi cheese. When it comes to pizza pies, stick with the fan favorites. The Surf with butter poached lobster, chanterelle, charred cauliflower and summer truffle is not to be missed, and The Farm is topped with bacon, egg, Yukon gold potatoes, Bermuda onion, Crimini mushrooms and smoked mozzarella. Need we say more?

To get a taste of Pizza & Burger, go any day between 5 p.m. and midnight. During the restaurant’s Social Hour, which is offered daily from 5 p.m. – 7 p.m., you’ll get buy-one, get-one-for-$1 cocktails, half-priced beers, and $5 wine specials.

O’Toro Tartare at NaiYaRa

NaiYaRa: The Inside Scoop
Every chef has a couple of “secret” menu items in his/her back pocket, and fortunately for us, Sunset Harbour’s top Asian spot, NaiYaRa {1854 Bay Road, Miami Beach; 786.275.6005}, has let the cat out of the bag. Known by regulars only, Chef Bee’s O’Toro Tartare combines finely-minced Blue Fin O’Toro meat, fresh grated wasabi, truffle paste, rayu (a hot sesame seed oil) and honey-kimchee sauce. Before it’s served, the tartare is then pressed into a wooden box and brushed with a house soy, kizami (marinated fresh wasabi), ikura, caviar, edible gold flakes, fresh shaved black truffle, and to add a little “crunch,” rice crackers.

Original db Burger at db Bistro Moderne

Miami Spice may have ended, but in this edition of “This Week in Eats,” we have four great reasons why there’s no need to miss it. Checkout some of our favorite restaurants, listed below, that are making up for Miami Spice with special prix-fixe menus.

db Bistro Moderne: Burger & Bordeaux is back at db Bistro Moderne {255 Biscayne Boulevard Way, Miami; 305.421.8800}! For the entire month of October, diners are invited to indulge in the Original db Burger, the Miami winner of Zagat’s “Best Burgers in the USA,” along with an appetizer, dessert and a glass of Bordeaux for only $39. While there’s plenty to get excited about at a Daniel Boulud restaurant, this burger is worth the deal alone. Paired with Pommes Frites and a glass of 2010 Château de Ricaud, Bordeaux Superieur, Cadillac-Côtes de Bordeaux, its a ground sirloin burger stuffed with red wine-braised off-the-bone short ribs and foie gras, topped with fresh horseradish and oven-roasted tomato confit, and served on a homemade toasted Parmesan and poppy seed bun.

Dolce Italian: Miami’s finest foodies have two more reasons to visit Dolce Italian {1690 Collins Avenue, Miami Beach; 786.975.2550}: “Mangia Mondays” and “Wine Down Wednesdays.” Starting this week, fans of the Italian hotspot can head to the restaurant every Monday and get a plate of Dolce Italian’s signature, authentic pasta for just $10. As if that weren’t enough, they can then return on Wednesday, every Wednesday, pick their favorite wine sold by the glass, and get the whole bottle for 50% off.

Juvia Miami: Throughout the month of October, Miami’s best rooftop restaurant, Juvia Miami {1111 Lincoln Road, Miami Beach; 305.763.8272}, is offering a prix-fixe menu that includes an appetizer, an entrée, a dessert and a glass of champagne or wine for just $45. Choose from appetizers like Kale and Farro Salad or Shrimp Anticucho, entrées like Roasted Organic Baby Chicken and Grilled Hanger Steak, and of course, dessert. Maybe an Almond Fig Tart, perhaps?

Driftwood Room at Nautilus: Now through November 19, guests can enjoy lunch and dinner at Driftwood Room at Nautilus {1825 Collins Avenue, Miami Beach; 305.503.5700} for the same price as Miami Spice. For $23, enjoy a three-course lunch of favorites like the Mediterranean Dip Duo, Compressed Watermelon Salad, Local Fish Tacos with ruby grapefruit slaw, Pumpkin Brûlée Tart, and more. For dinner, which costs just $39 for three courses, indulge in dishes like Octopus Carpaccio, Spinach Linguine & Grilled Lamb Sausage, Papas Bravas, Charred Broccolini, Pan Seared Local Snapper, or a Chocolate Tart, to name a few.

qmmb-scoops

Miami Spice may have ended, but at Quality Meats Miami Beach, that doesn’t mean the reasonably-priced, prix-fixe menus have to disappear. Regarded as Miami Beach’s acclaimed steakhouse, Quality Meats Miami Beach {1501 Collins Avenue, Miami Beach; 305.340.3333}, now offers its nightly Grill Menu, which gives guests an opportunity to indulge in two courses from the restaurant’s most notable dishes for just $39 per person.

As part of the deal, diners can choose one appetizer or salad and one entrée from the restaurant’s select menu. Don’t know where to start? Opt for plates like Yellowfina tuna carpaccio with roasted beets and lemon olive oil, roasted bone marrowkale & manchego salad with chorizo vinaigrette, tomato & stracciatella, or the restaurant’s winner of the Food Network & Cooking Channel South Beach Wine & Food Festival’s Meatopia “People’s Choice Award,” house-cured slab bacon with peanut butter and jalapeño jelly. As if that’s not enough already, guests can then choose from a range of hearty mains: like baby back ribs with mint and a honey-lime sauce, a petit filet mignon, blackened redfish drizzled with chimichurri or fennel saffron, or lemon charred chicken.

If you want to pair your meal with a side, choose from mouthwatering options like broccoli and cheese bites dusted with Cheetos®, corn creme brûléegnocchi and cheese, or pan roasted crispy potatoes. All sides are served a la carte, are priced between $11 and $13 apiece, and are made to share.

Of course, no decadent meal is complete without dessert, and Quality Meats Miami Beach certainly doesn’t disappoint. Choose one of the restaurant’s dressed-up ice cream scoops, like coffee and doughnuts, where chocolate doughnuts are swirled into creamy coffee-flavored ice cream, or The King: a mix of peanut butter-banana sorbet, caramel bananas, candied peanuts, cinnamon toast, and brown sugar bacon. Want something richer? Quality Meats has that, too. We recommend the decadent chocolate cake. Priced at just $18, it serves up to four and has crème fraiche, port cherries, and spiced “crunchies.”

Quality Meats Miami Beach is open for dinner on Sunday and Monday, from 6-11 p.m., and from Tuesday through Saturday until midnight. Prices shown exclude tax and gratuity.

On November 2, 2016 Graspa Group’s Salumeria 104, Midtown Oyster Bar, Spuntino Catering, Allegiance Crane, Eat This Drink That Go and American Airlines will come together to produce the third annual “Flying with the Stars” dinner. Taking place at The Bath Club, in Miami Beach, this one-of-a-kind event will showcase a once-in-a-lifetime six-course wine-pairing dinner created by Italian Michelin-starred Chefs Davide Brovelli (Il Sole di Ranco) and Tommaso Arrigoni (Innocenti Evasioni). Miami’s own chefs, Angelo Masarin, Carlo Donadoni and the Salumeria 104 and Midtown Oyster Bar teams, will also contribute their talents to the meal.

As charitable as it is delicious, Flying with the Stars has raised over $60,000 at its silent auction over the past two years, always donating 100% of funds to a charity of their choice. This year, Flying with the Stars aims to raise $50,000 to benefit two organizations: the Dolphins Cancer Challenge and Operation Lift Hope. First launched by the Miami Dolphins Foundation in 2010, the Dolphins Cancer Challenge raises money for innovative cancer research at the Sylvester Comprehensive Cancer Center. Separately, Operation Lift HOPE aims to transform the face of homelessness in Fort Lauderdale, and as the name implies, “lift hope” for families, veterans and individuals suffering from homelessness in the Fort Lauderdale community.

Interested in attending? (We are!) Tickets for Flying with the Stars are priced at $250 per person. Purchase tickets here before October 7th with the code “EarlyStar” to get a discount.

This event will take place on November 2, 2016, from 7 – 11 p.m. The Bath Club is located at 5937 Collins Avenue, Miami Beach, FL 33140.

See you there!
