Ingredients
1.5-2 lbs monkfish
1 bunch Swiss chard
Herb blend (equal parts chives, parsley, and tarragon; chopped)
1/2 a lemon
4 Tbsp butter, melted
Method
Preheat the oven to 350 degrees. In a pan, sear monkfish over medium heat for two minutes. Place it in the oven. In a small bowl, mix chopped chives, parsley, and tarragon and set the mixture aside. After four minutes, pull the monkfish out of oven and season both sides with the melted butter and herb mixture. Place the monkfish back in oven. Cook for four minutes or until the fish reaches a temperature of 165 degrees. On the grill, wilt the Swiss chard and char half a lemon.
To serve: Place the monkfish on a small pile of wilted Swiss chard and garnish with charred lemon. Enjoy!
