Ingredients
For the dish:
4 Homemade Crispy Waffles
4 6-oz Nova Scotia Fried Lobster Tails
2 oz Greek honey
2 oz honey mustard sauce
2 oz clarified butter
4 lemon halves
4 parsley stems
Crispy waffles:
125 g all-purpose flour
50 g cornstarch
3 g Kosher salt
3 g baking powder
2 g baking soda
200 g buttermilk
60 g clarified butter
85 g half & half
34 g egg yolk
28g SUGAR
3 g vanilla extract
65 g egg whites
Honey Mustard Sauce:
8 oz mayonnaise
1 oz honey
2 oz white distilled vinegar
1/2 oz dry mustard
Nova Scotia Fried Lobster Tails:
1 lb high-gluten flour
2 oz cornstarch
2 oz garlic powder
1 oz iodized salt
1 qt buttermilk
4 Nova Scotia Lobster Tails
Method
For the waffles: Mix all ingredients, except the egg whites. In a separate container, whip the egg whites and slowly add them to the mix. Let it stand. With an eight-ounce ladle, place scoops of mixture into a waffle iron. Cook for three minutes or until you’ve reached your desired crispiness and color.
For the sauce: Mix all ingredients together. Set aside.
For the lobster tails: Mix all powdered ingredients together. Cut lobster tails in 3/4-ounce morsels. Place in buttermilk. Dredge in powder mix. Fry at 350℉ for seven minutes or until golden brown.
To serve: Cut waffle in four pieces. Place in shingled long oval platter. Drizzle enough Greek honey on waffles to cover the holes. Pour two ounces of honey mustard sauce on the other side of the platter and place tails in honey. Garnish with lemon halves and parsley. Serve with a ramekin (or a small bowl) of clarified butter.
