Head to Scarpetta by Scott Conant {4441 Collins Avenue, Miami Beach; 305.674.4660} this Saturday, and every first Saturday of the month, for a pasta-making class led by Chef de Cuisine Neil O’Connell and pasta maker Roberto Fernandez. During this class, pasta lovers will learn how to make dough, tomato sauce, ravioli, and spaghetti, as well as how to fill, handle, cook, and serve the pasta. At the end of the class, everyone will be able to taste the dishes they’ve made, and they’ll go home with recipe cards for the tomato sauce and pasta dough. This class will run from Noon to 1:30 p.m. All classes are open to adults and children ages 12+ years, and the class is priced at $75++ per person. Spots are limited. Reservations required.

Aushak Dumplings from Seaspice


serves four


Ingredients
Dumplings:
1/4 lb dill
3 lbs flowering chives
2 lbs leeks
1/4 lb cilantro
4 Tbsp ground coriander seeds
Kosher salt and pepper, to taste
Dumpling or wonton wrappers
Dried mint, for garnish
Paprika, for garnish
Micro herbs, for garnish

Lamb Ragu:
5 lbs ground lamb
2 c yellow split peas, soaked
4 large yellow onions
8 cloves garlic
5 c whole canned tomatoes, crushed and strained
1 Tbsp cumin
2 Tbsp ground coriander seeds
salt and pepper, to taste
1 tsp turmeric
4 Tbsp olive oil
Feta Sauce:
8 oz feta cheese
1 container plain yogurt
3 cloves garlic
salt and pepper, to taste
Method

For the dumplings: Roughly chop the dill and cilantro, slice the flowering chives, and dice the leeks. Sweat all the dumpling ingredients. Put the filling in the dumpling or wonton wrappers.

For the lamb ragu: Soak the yellow lentils in water for at least an hour. In a large saucepan, heat the olive oil. Add garlic and onion. Sweat those ingredients. Once the mixture is translucent, add the turmeric, coriander, cumin, ground lamb, and tomatoes. Cook for about 20 to 25 minutes.
For the feta sauce: In a mixer, combine the feta, yogurt, garlic, and salt. Blend until a “vortex” forms. Continue to blend until smooth. Strain.

To serve: Steam the dumplings and warm the lamb ragu right before serving. Spoon the feta sauce onto a plate, place the dumplings on top of the sauce, and then spoon the ragu on top of the dumplings. Garnish with dried mint, paprika and micro herbs, if desired. Enjoy!

In addition to the regular menu, Executive Chef Santiago Gomez will offer a special Molcajete menu just for the Super Bowl! Priced at $27, the molcajete can be made with shrimp, octopus, lobster, chicken or ribeye, and comes with your choice of sauce, homemade guacamole, or queso fresco. Get bottle service or $20 beer buckets, and watch the game anywhere you please—there will be TVs on the waterfront patio and a giant projection screen in the main dining room. Fontainebleau Miami Beach
At the Fontainebleau Miami Beach {4441 Collins Avenue, Miami Beach; 305.674.4670}, turn your watch party into a pool party! Watch the game from a private poolside cabana, one with a 42-inch screen television, Wi-Fi, butler service, a mini refrigerator, a sectional lounge, chairs, tables, privacy curtains, ceiling fans, and even a digital safe. Cabanas will be available all day long, from 9 a.m. to 11 p.m., and reservation, food, and drink packages will start at $450 each.

The Miami Beach EDITION
Head downstairs to Basement Bowl, at The Miami Beach EDITION {2901 Collins Avenue, Miami Beach 786.257.4548}, which will have the big game on all of its bowling alley TVs, projected on a wall above the DJ Booth, and projected in Larry Lounge. Matador Room


With its calming vibes, spa-like decor, A-list guests, sparkling pool, and hip bar/lounge/ice skating rink/bowling alley, Basement, there are already so many reasons to go to The Miami Beach EDITION. So when it launched a monthly dinner series, Wine & Dine, at Jean-Georges’ iconic Matador Room {2901 Collins Avenue, Miami Beach; 786.257.4600} in fall 2016, South Florida foodies found one, too. Dedicated to pairing the world’s most prestigious wines and winemakers with Matador Room’s award-winning cuisine, this monthly installment gives Miami food and drink lovers a delicious, indulgent night out on Miami Beach—in one of the Magic City’s hottest hotels.
And on Tuesday, February 6, this dinner series will return to The Miami Beach EDITION for the first dinner of 2018. Hosted by Steve Leveque, VP of Winemaking at California’s HALL Wines and WALT Wines, the night will begin with a welcome reception at Matador Bar, followed by a five-course, sit-down dinner paired with bespoke vintages of Leveque’s choosing. The reception will include passed Peekytoe Crab and Corn Fritters, Pink Shrimp with Cucumber, Strawberry Emulsion and Lemon Balm, and glasses of HALL Wines Sauvignon Blanc 2016. All wines sipped throughout the evening will be from HALL and WALT wineries, including the HALL Wines “Terra Secca” Cabernet 2014, a rare variety from a very limited case production.
As for the sit-down dinner, it’s sure to be a night your taste buds won’t forget. Here are the food and wine pairings diners and drinkers can get excited about:

Tallarin Saltado


The Miami Marathon is just two days away! And while you’ve probably been training for it since January 2017, this close to the race, it’s time to prep your body in another way: with carbohydrates. You already know about Scarpetta’s “Carb Up” menu, but if you don’t want to make the drive all the way to Miami Beach, La Mar by Gaston Acurio {500 Brickell Key Drive, Brickell; 305.913.8358} has a menu with runners in mind, too. Start with a special Carbo-Load Menu to power you through the race, and to recover, feast on La Mar’s extravagant Sunday Brunch after the race is done.

As the name implies, this a la carte menu, which is prepared by none other than the restaurant’s talented Executive Chef Diego Oka, is a runner’s dream come true. Offering special dishes packed with carbohydrates, runners will find a delicious take on modern Peruvian cuisine, with dishes like Tallarin Saltado with bucatini pasta, stir fried tenderloin, red onions, tomatoes, green onions, soy sauce, and cilantro; and Quinoa Chaufa with shrimp, calamari, octopus, red quinoa, nikkei sauce, pickled veggies, and red peppers. This menu is available tonight and tomorrow only, from 6 p.m. to 11 p.m.

Then, once you’ve finished those 26.2 miles and it’s time to celebrate, rehydrate and refuel at La Mar by Gaston Acurio’s Sunday Brunch! From Noon to 3:30 p.m., brunch lovers will be able to take advantage of the hotel’s raved-about midday meal, which has everything from Plancha Anticuchero, Lomo Saltado and Fried Egg, Jalea Frita, and Pescado Chorillana, to unlimited brunch cocktails, Chaufa Aeropuerto for the table, and elaborate stations brimming with fresh seafood and savory grilled meats. Add some Tattinger champagne and it’s a weekend of eating fit for… well, the champion that you are.
The Carbo-Load Menu is priced a la carte. The Sunday Brunch is priced at $95++ per person. An elevated brunch menu with additional a la carte options, like King Crab Anticuchero, and unlimited Tattinger champagne is available for $125++ per person.

While it may be winter in the rest of the nation, here in sunny South Florida, spring is already in the air—especially at Daniel Boulud’s new Miami restaurant, Boulud Sud {255 Biscayne Boulevard Way, Downtown Miami; 305.421.8800}. For a cocktail that lets you “cheers” to the floral season, try Boulud Sud’s White Cosmopolitan martini, and then use the recipe below to make it at home. Enjoy!
Combine 1 3/4 ounces Ketel One Vodka, 1 ounce white cranberry juice, 3/4 ounce lime juice, 1/2 ounce St. Germain Elderflower, and 1/4 ounce simple syrup into a shaker. Shake and strain into a carafe. Serve the drink in a martini glass, with the orchid ice ball in the middle. (Pro-tip: Don’t forget to freeze your orchid flower into an ice ball ahead of time.)

Lamb Trio from The Strand Bar & Grill
with smoked yogurt, confit tomato & cucumber gremolata
serves four
Ingredients
Lamb:
2 racks of Lamb, Frenched
Cucumber Gremolata:
1 bunch parsley
5 mint sprigs
1 garlic clove
2 lemons, zest only
1 Tbsp red onion
1/2 cucumber, cubed
1 kosher pickle
Extra virgin olive oil
1 Tbsp white vinegar
Salt
Smoked Greek Yogurt:
1/2 c Greek yogurt, extra thick
6 drops liquid smoke
Confit Tomato:
1 pint cherry tomatoes, halved
1 large eggplant
1 Tbsp red pepper flakes
Extra virgin olive oil

Method
For the lamb: Remove the lamb racks from their packages and cut into four portions. Grill all four portions of lamb to your desired temperature. Let them rest for at least 10 minutes. Do not let the lamb sit out too long, or it will be too cold to serve.
For the cucumber gremolata: Cut the parsley and mint finely, and reserve on the side. Using a microplane, grate one clove of garlic and zest both lemons. Add both to the cut herbs. Take the red onion, cucumber, and pickle and cut them into small cubes, trying to cut them all the same size. After they are cubed, add the vegetables to the herb mixture. Cover with extra virgin olive oil. Add the white vinegar to balance the flavors, and salt to taste.
For the smoked yogurt: Add the liquid smoke to the Greek yogurt. Set the mixture aside to meld.
For the confit tomato: Cut the jumbo eggplant into cubes, and season with salt, red pepper flakes, and olive oil. Sauté the eggplant briefly, until it has a little color. Finish cooking the eggplant in the oven for five minutes, or until tender. Add in the halved cherry tomatoes.
To serve: Put a large spoonful of smoked yogurt on a plate and, using the back of the spoon, smear it into a large circle. Place the lamb in the middle of the yogurt circle. Gently place the confit tomato around the lamb. Mix the gremolata mixture and sauce liberally over the lamb.
