With its calming vibes, spa-like decor, A-list guests, sparkling pool, and hip bar/lounge/ice skating rink/bowling alley, Basement, there are already so many reasons to go to The Miami Beach EDITION. So when it launched a monthly dinner series, Wine & Dine, at Jean-Georges’ iconic Matador Room {2901 Collins Avenue, Miami Beach; 786.257.4600} in fall 2016, South Florida foodies found one, too. Dedicated to pairing the world’s most prestigious wines and winemakers with Matador Room’s award-winning cuisine, this monthly installment gives Miami food and drink lovers a delicious, indulgent night out on Miami Beach—in one of the Magic City’s hottest hotels.
And on Tuesday, February 6, this dinner series will return to The Miami Beach EDITION for the first dinner of 2018. Hosted by Steve Leveque, VP of Winemaking at California’s HALL Wines and WALT Wines, the night will begin with a welcome reception at Matador Bar, followed by a five-course, sit-down dinner paired with bespoke vintages of Leveque’s choosing. The reception will include passed Peekytoe Crab and Corn Fritters, Pink Shrimp with Cucumber, Strawberry Emulsion and Lemon Balm, and glasses of HALL Wines Sauvignon Blanc 2016. All wines sipped throughout the evening will be from HALL and WALT wineries, including the HALL Wines “Terra Secca” Cabernet 2014, a rare variety from a very limited case production.
As for the sit-down dinner, it’s sure to be a night your taste buds won’t forget. Here are the food and wine pairings diners and drinkers can get excited about:

Tuna Tartare Dip with warm, crunchy tortillas
Chipotle Cured Salmon with cucumber yogurt and crispy potato flakes
Wine pairing: WALT Wines Sonoma Coast Chardonnay 2016
Lobster and Black Truffle Tacos
Grilled Maitake Mushroom, Goat Cheese and Fresno Pepper Emulsion
Wine pairing: WALT Wines “Blue Jay” Pinot Noir 2016
Grilled Lamb Chops with cucumber, olives and gorgonzola dolce
Pickled Chilies with mint crubs
Wine pairing: HALL Wines “Terra Secca” Cabernet 2014
Crackling Beef Short Rib with a smoked chili glaze and polenta “fries”
Wine pairing: HALL Wines Kathryn Hall Cabernet Sauvignon 2014
Marshmallow, Nougat and Chocolate Petit Fours
All courses will be served family-style. The reception will start at 7 p.m., follow by dinner in Matador Room’s round oval dining room. This installment of the Wine & Dine dinner series is priced at $195 per person. Seating is limited to 32 guests. Reservations are required and can be made here.
