Bacalhau de Gomes de Sa from Old Lisbon

Ingredients

2 lbs salted cod
2 lbs potatoes, peeled and sliced 1/2-inch thick
2 c milk
3 onions, sliced
3 cloves garlic, crushed
4 hard-boiled eggs, sliced or quartered
1/2 c olive oil
20 black olives
1 bunch parsley, chopped
salt, to taste
pepper, to taste

Method

In a bowl of water, soak cod for 24-36 hours, changing water every eight hours. Once cod is desalted, remove bones and shred the fish into small pieces. In a pot, bring milk to a boil and turn off heat. Place cod pieces in hot milk for one or two hours.

In a pot of boiling water, add potato slices and cook for 25 minutes. Remove and season with salt and pepper. In a hot skillet, add a splash of olive oil. Add onions and sauté for five or ten minutes. Add garlic and continue cooking for two minutes.

Preheat oven to 375 degrees. In a casserole dish, drizzle 1/4 cup olive oil. Add layers of potatoes, drained cod, and sautéed vegetables. Season with salt and pepper, to taste. Drizzle another 1/4 cup olive oil on top, then bake for 40 minutes.

To serve: Garnish with hard-boiled eggs, parsley, and black olives.
