Celebrity Chef Daniel Boulud’s db Bistro Moderne at the JW Marriott Marquis {255 Biscayne Boulevard Way, Downtown; 305.421.8800} may have a new executive chef at the helm, but Chef Clark Bowen is no stranger to the db kitchen; for the last five years, he has served as the restaurant’s sous chef. In his new position, Bowen looks forward to adding his creative touch to the menu. Beginning this spring, look for lighter dishes, lots of seafood, and bright, vibrant Miami flavors (after all, Bowen was born and raised in the Magic City). While details of the new menu are still in the works, you can rest assured that the menu’s French classics like Coq au Vin, Escargot, Duck Confit, and Steak Frites will still be offered.

1. How did you get started in the food world? What made you decide you wanted to be a chef?
When I was 15, I got my first job working at Subway. Then I started working at pasta places and steakhouses while I was in school. One day I realized, while working for Chef Patrick Broadhead at Max’s Grill, that I could make a career out of what I loved doing, which was cooking. That’s when I really dove in. I started working double shifts at the best places I could find. Eventually, I met Pascal Oudin from Pascal’s On Ponce.

2. How did you end up working as sous chef at db Bistro?
My wife was pregnant with our first child and I had been with Pascal for about five years and my ceiling for growth was limited. I had always tried to put myself in position to work with the best chefs in town, so when Daniel Boulud came to Miami, it was a no-brainer that I had to work for him.

3. What is it like working with a culinary icon such as Daniel Boulud?
It is inspiring to see someone who is essentially at the top of the game still bringing it harder than anyone else. His knowledge and dedication are impressive, but his thirst for the next new thing to stay ahead of the curve is what keeps him in another stratosphere.

4. What do you think is the biggest difference between being sous chef and being executive chef?
Paperwork and PR!

5. What are some of the changes you’re planning on implementing to the menu?
I’m trying to keep the menu light to pair with the Miami weather. Still working out some kinks, but I can’t wait to share our new menu.

6. How does your background influence your cooking style?
My mother is Cuban and my father is English. I grew up eating classic Cuban foods, so that impacted my palate right from the beginning. But more than being a chef with a Cuban background, I’m a chef who grew up in Miami. There is so much diversity. It’s not just Cuban. I had friends from all over South America and the Caribbean growing up, and I’d go to their houses to eat their family food. It’s a melting pot.

7. How does Miami influence you when you’re creating menu items and selecting ingredients?
It is great to be in a location where we can find the best citrus, best tomatoes, and seasonal produce and fish that were all either in the ground or swimming just hours before purchasing.

8. What are your personal favorite items on the menu?
All the menu items have a place in my heart, otherwise I wouldn’t put them on the menu. But if you have never been here before, order the db Burger and enjoy!

9. Do you have a favorite cooking show on TV?
I’ve been trying to stay away from network cooking shows—they just bring back the stress of the day. I don’t think that those shows are made for people who work in the industry. I do enjoy some of the specialized series on Netflix. Those seem more inspiring and directed to those who live the life.

10. Do you have a food guilty pleasure?
My children call me the cookie monster. I have no self-control when it comes to cookies. Just ask my pastry chef!

Tomorrow, October 21, from 7-10pm, acclaimed celebrity Chef Daniel Boulud will be making a special appearance at db Bistro Moderne {255 Biscayne Boulevard Way, Downtown;

The evening will be a “Tour de France” extravaganza, featuring all-inclusive food and drinks from five different regions in France. What if we told you there was a casual, homegrown, no-fuss barbecue joint where you could sit back, relax with friends, sip on craft beers, and nosh on what have been named the best ribs in the city? You may shake your head and say that kind of place doesn’t exist in Miami. But it does!

Sparky’s is the brainchild of Hans Seitz and Kevin Kehoe, two chefs who met back in 1987 while working under Chef Michael Moran at a restaurant called Who’s in the Grove. The two friends parted ways for a while before meeting up again in Miami to open up their barbecue venture—and adventure—in 2010.

Five years later, Sparky’s is still going strong, staying true to its philosophy: to make the best barbecue out of the best ingredients. “We make everything in-house—except for the fries and the ketchup!” Hans says.

The décor is cool and casual, with various tchotchkes covering the walls. Dozens of craft beers (both bottled and draft) are on offer, and Sparky’s prides itself on only serving American varieties.

Of course, the ribs are a must-order, though we also recommend the Pulled Pork Plate and the Jerk Chicken, both of which were absolutely fantastic. The signature homemade rubs and sauces add to the one-of-a-kind dining experience, not to mention the fresh-daily desserts—the pecan pie is a personal fave. You can’t go wrong when choosing sides, but our top choices had to be the Macaroni and Cheese and the Sweet Potato Mash.

The “Beat the Clock” Happy Hour is particularly popular, as young professionals gather here for a drink or two after work during the weekdays. Drafts start at just $4 at 4pm, and go up one dollar each hour until 7pm. They also offer half-off wings and hush puppies.

Chef Ryan Martin 180 Degrees

You may remember the DRB as the Democratic Republic of Beer, which opened in Downtown Miami in late November 2012. But in September 2014, the adventurous Chef Ryan Martin took over the space, which was reinvented, revamped, and re-seasoned into the inimitable gastropub: 180° at the DRB {501 Northeast First Avenue, Downtown; 305.809.7564}. The new concept not only had a focus on craft beers but on an array of delightfully delicious—albeit unexpected—menu items.

The cool, laid-back atmosphere of 180° welcomes an unfussy yet sophisticated crowd, and its beer list is second to none (there are over 150 on offer!); but the standout here is most definitely the food, which is a labor of love for Chef Martin. The Massachusetts native was classically trained in French cuisine in New York City and has worked under acclaimed chefs such as Todd Erikson of Haven Lounge and Chef Sonny Oh of Nobu and Juvia. He also spent some time as executive chef at the Clevelander in Miami Beach before heading downtown to open 180°.

“Global ingredients done my way is the basis of my cuisine,” says Chef Martin. “The idea behind 180° is that customers will be presented dishes with ingredients from different cultures and regions of the world that use different cooking methods. The goal is to have customers leave with a 180-degree (different) understanding of food, and hopefully learn something new along the way.”

Chef Martin isn’t afraid to experiment with ingredients, flavors, and techniques, using tools such as blow torches, dehydrators, and liquid nitrogen, the result of which is an intriguing cornucopia of dishes—what he calls, “gastronomy redefined.”

The menu is seemingly pub food at its core, yet it combines Chef Martin’s culinary background with a dash of Latin inspiration (after all, we are in Miami), and some Asian influence sprinkled in for good measure (which can be enjoyed with or without chopsticks).

The burgers are especially popular, specifically the 50/50, a blend of chorizo and prime beef topped with queso frito, maduro, fried egg, and spicy citrus aïoli.

Other standout dishes include: the Snow Crab Egg Rolls, which are sliced into quarters to expose the creamy mixture of crab, cream cheese, green onion, and yuzu ponzu; the Tomato Mozzarella Salad, a mixture of heirloom tomatoes, cucumber, and avocado with a sesame balsamic vinaigrette; the Salmon Gyration, a sushi-like presentation (with potato bread instead of seaweed), swirled with smoked salmon, Swiss cheese, cream cheese, frizzled onion, green onion, poppy and sesame seeds, ikura (salmon caviar), and spicy lime aïoli; and, our personal favorite of the evening, the Maduro y Queso Frito, sweet plantains served with queso frito and candied bacon—divine.

Dessert here is an experience in itself. Chef Martin has a thing for liquid nitrogen, and uses it to craft his own homemade ice cream on-site, changing up flavors on a regular basis. We were treated to the Deep Fried Twix, bacon-chocolate ice cream drizzled with bacon-caramel sauce and crushed frozen Twix served alongside a tempura deep-fried Twix bar, and the Fried Bread Pudding, Peach Schnapps, and vanilla-flavored nitrogen ice cream drizzled with caramel sauce.

180° recently celebrated its one-year anniversary, a feat for any restaurant in Miami, especially one located in this less-foot-trafficked area of downtown (don’t let the facade fool you). It’s especially lively during weekday happy hour and during its live music performances.

1. “Snail Social” Happy Hour Series Kickoff

What: Join local nonprofit Slow Food Miami, along with Miami chefs, producers, and food supporters, as it kicks off this season’s “Snail Social” happy hour series. Guests will enjoy special happy hour prices on signature bites and cocktails, while they discuss the latest in local food culture with those leading the charge. Admission is free and open to the public. The series continues on the second Tuesday of every month through June 2016.
