One of the things we love most about Miami Spice is that it doesn’t just last for one month, it lasts for two whole months. This means that there’s still plenty of time to visit all your favorite restaurants—and some brand-new ones—and enjoy unmatched three-course Miami Spice menus at discounted prices (dinner: $39; lunch: $23).

As we try to hit up as many Spice menus as we can, here are five more of our favorites we don’t want you to miss:

We love that Celebrity Chef Laurent Tourondel likes to keep things interesting—his blackboard menu changes daily—and that means he’s entirely revamped his Spice menu for the month of September. For appetizers, our hands-down first choice is the Veal and Pork Meatballs. Chef Tourondel served these babies up for us during a special preview dinner last March, and we’ve been dreaming about them ever since! For entrées, it’s a toss-up between the 12oz CAB Coulotte and the Grilled Black Tiger Prawns. To round out the meal, you’ll also be able to choose your own side and melt-in-your-mouth dessert. But that’s not all! Even though it’s Miami Spice, you’ll still receive the complimentary goodies that are brought to every table at dinner: Chicken Liver Mousse with artisan bread and pickled vegetables, and the famous giant Popovers dusted with Gruyère cheese.

There’s nothing more disappointing than arriving at your planned restaurant of the evening, sitting down at your table, and then having your server tell you: “We’re not offering our Miami Spice menu right now.” With many establishments placing restrictions on when their specials are actually available, it’s comforting to know that at Bulla, it’s always time for Spice. Just last week, the Spanish restaurant rolled out updated Spice menus, featuring items such as the Albóndigas de Cordero (lamb meatballs), Branzino a la Vasca, and the Torrija dessert. As an added bonus, for both lunch and dinner, you can enjoy TWO glasses of any of Bulla’s popular sangrías for just $10.

For Miami Spice, the Conrad Miami’s signature restaurant is serving up some of its classic dishes and seasonal favorites. For appetizers, we recommend the crisp Waldorf Salad, followed by the Pan-Roasted Monkfish, which is served with confit garlic, Mediterranean baby vegetables, and red wine reduction. And for dessert, don’t miss out on the gooey Chocolate Coulant Cake served with salted caramel ice cream. Plus, if you’re looking for a quick power lunch, Atrio’s got you covered. Simply ask for the special “Taste of Time” menu, which guarantees (if you so choose) that you’ll be in and out in 45 minutes or less. An hourglass will be placed on your table at the start of the meal; and if your meal isn’t completed in time, your lunch is on the house.

Celebrity Chef Scott Conant’s menu at Scarpetta at the Fontainebleau is drool-worthy any time of year. But during Miami Spice, it becomes even more enticing. The restaurant recently revamped its Spice menu, giving you even more options to savor. For appetizers, we recommend the Creamy Polenta, which is served alongside a medley of truffled mushrooms (which happen to be a specialty of the restaurant this time of year). Continue the experience with the Short Rib Agnolotti Dal Pin before ending with the traditional dolce: Almond Panna Cotta. If you’re not in the mood for Italian, Fontainebleau’s three other flagship restaurants—Hakkasan, Michael Mina 74, and StripSteak—have also updated their Spice menus for the month of September.

Decisions, decisions! Hands down, one of the most extensive option-filled Spice menus out there is from the SLS South Beach’s Bazaar by José Andrés. First, you’ll choose your appetizer, or “snack,” from five different options (we recommend the Bao con Lechón—pork belly on a Chinese bun). Next, you’ll select THREE options from an expansive menu that includes several “Verduras,” seven types of “Carnes y Mariscos,” and three “Fruits and Vegetables” dishes. And don’t forget: You’ll also get to choose a dessert, so be sure to save room!

All three Miami locations of the popular steakhouse will be open early for Easter Sunday. Along with the regular menu, Morton’s is offering a Steak and Lobster Special for only $55 per person.

The Oceanaire will be opening its doors at noon on Easter (it’s typically only open on Sundays for dinner). Along with its regular menu, the restaurant will be featuring special brunch items such as Smoked Salmon Eggs Benedict, Crab Cake Eggs Benedict, and Brioche French Toast.

Not only will the Biltmore be hosting its signature Sunday Champagne brunch buffet, but from now through Easter Sunday, it will be selling special chocolate Easter eggs handcrafted by Executive Pastry Chef Olivier Rodriguez. The confections have been filled with a variety of treats, from candy to complimentary massages, cabana rentals, and afternoon tea. Five lucky kids who find a golden ticket inside their chocolate egg will gain entrance to Chef Rodriguez’s Marvelous Chocolate Making Workshop, where they will learn how to make their own chocolate confections at The Biltmore Culinary Academy.

For only $27 per person (plus $15 per person if you opt for the bottomless mimosas and sangria), you can choose any three dishes from Bulla’s special Easter Brunch Tasting Menu, a delicious mix of huevos, tapas y raciones, platos familiars, and dulce. Expect offerings that include Cordero y Setas (braised lamb with crimini, oyster mushrooms, poached egg, and mint oil) and Voulevant con Espinacas (with creamed spinach, quail eggs, and hollandaise sauce)—and much more.

Keeping with tradition, Larios on the Beach will host its annual family-friendly Easter event. From 11am-4pm, guests can enjoy a special Easter menu, live entertainment, goodie bags, and even a visit from the Easter Bunny.

The Restaurant at The Setai {2001 Collins Avenue, Miami Beach; 855.923.7899}
The Setai will host its Easter Sunday Jazz Brunch featuring an endless array of gourmet offerings, bottomless Champagne, mouthwatering desserts, live jazz, and more. Guests dining with kids should not miss out on the exciting Easter Egg Hunt that will take place in the Courtyard at 11am. Cost is $110 per adult; $55 for children ages five-12.

In addition to La Mar’s delectable Peruvian-inspired buffet brunch ($85 or $120 per person, including unlimited brunch cocktails and Champagne, $35 for kids ages 6-12), you can expect a fun-filled Easter-themed day at Mandarin Oriental. From 11am-noon, families are invited to participate in an Easter Egg Hunt on the hotel’s private beach, and from noon-2pm, the Easter Bunny will make an appearance, greeting children and posing for photos in the hotel’s lobby.

StripSteak {Fontainebleau Hotel, 4441 Collins Avenue, Miami Beach; 877.326.7412}
Start the day off with a sumptuous complimentary signature cocktail. You’ll then select your choice of first and second courses in addition to enjoying a seasonal seafood bar, a Greek yogurt parfait station, and endless artisanal pastries, lavish sweets, and fresh fruit. Cost is $68 per adult, $34 per child ages 4-12. After brunch, take part in Fontainebleau’s annual Eater Eggstravaganza. From 2-4pm, kids and their parents can enjoy Easter treats, art and crafts, egg decorating, interactive family-friendly shows, and the hotel’s exciting Easter egg hunt.

With the new year will come new trending ingredients, cooking philosophies, and dishes. Here’s what local chefs think 2015 will hold.

For starters, I think dining will continue to evolve with technology. I think both restaurants and diners will continue to become more tech-savvy, whether it be tablet ordering, pre-ordering meals using mobile devices, etc. I also think there will be a continued focus on organic and natural ingredients, as diners are educated and health- focused. We will see more chef-driven, fun, casual concepts with a focus on local, seasonal cuisine accessible to all.

I think the concept of Spanish tapas will be a big dining trend in 2015, especially since Bulla will be opening two or three more restaurants next year. One popular ingredient in Spanish tapas is eggs, and I think that will be one of the trending ingredients. I prefer to use organic quail eggs—fried, boiled, or poached. They are quite difficult to work with but they are very popular on tapas.

In 2015, we will focus on bringing people the best meat on the market. We started dry-aging black Angus beef in-house in 2014—an expensive, time- consuming process, but one that yields a truly indulgent result. Dry-aging can take anywhere from 15 to 28 days, and typically up to a third or more of the meat’s weight is lost as moisture leaves the product. This concentrates the flavors of the meat. We sear each cut to order, and the result is the most tender, flavorful beef you can imagine.

Miami has become a true cosmopolitan city, and with that comes a more sophisticated palate. Yet sophistication doesn’t translate into complication. As a chef, I am going “back to basics” and see this being a trend in 2015. I’m choosing locally-grown produce and organic ingredients whenever I have the chance, and I’m keeping it simple, leaving the fuss out of the kitchen and letting the freshness and quality of my ingredients do the talking.

At The Setai, Father’s Day brunch will run from 11:30am-3:30pm and be all about stations. There’s a Rotisserie Station with meats like Caramelized Leg of Lamb and Porchetta. At the Seafood Station, freshen up with Alaskan King Crab Legs and Blue Point Oysters. Spice up Dad’s life at the Indian Station where Eggplant Masala awaits. At the Sun Coast Station, you’ll find Italian flavors in the pastas, salads, and antipasti. Last stop: The Pasty Station where marshmallow eggs, tarts, and more treats await. If your father loves beer, treat him to a one-of-a-kind brunch at the Ritz-Carlton’s Bizcaya restaurant. Their chefs are teaming up with Wynwood Brewing, Miami’s first craft production brewery, to host a Beer-B-Que Brunch. The brunch includes live music, barbecue dishes, and unlimited mimosas, bloody Marys, and (most importantly) beer! At R House, Father’s Day happens fo fall on Sunday Sauce day, which occurs on, naturally, Sundays from 11:30am-4pm. The Sunday Sauce Brunch Party at R House Wynwood features unlimited brunch appetizers and one main entrée for just $35, and bottomless mimosas, bloody Marys, bloody Marias, and sangría for just $22. Bulla

Wouldn’t life be a lot better if every meal began with a glass of fresh sangría and a plate of cured meats and cheeses? This is practically policy at Bulla, a gastrobar that opened last year in Coral Gables.

Slang for “chatter” in Spanish, Bulla (pronounced BOO-ya) creates a stir in the scene with its authentic gastrobar concept. The ambience is buzz-worthy, too—black paneled windows and a simple palette add sleekness. Equestrian-themed paintings and cobalt blue tile bring artistic funk. And earthy hardwood floors and caramel accents transport guests to a rustic eatery in Spain.

“In Spain, there is no such thing as a gastropub. They are called gastrobars,” explains Owner Carlos Centurion, formerly of Por Fin restaurant. “Gastrobars are informal places where food is the draw. There’s a certain playfulness to gastrobars—people come together to enjoy great tapas and cocktails.”

At Bulla, you can descend into the comfort of a cushioned chair on the outdoor deck for a cerveza and tapas. At a table for two, luxuriate over charcuterie and a bottle of Spanish wine. Or book the stunning private dining area and arrange a large selection of bites and sips.

Wherever guests settle, they can expect an authentic Spanish gastrobar experience. “We take pride in delivering a fun experience to our customers,” Centurion says. “The ambience at Bulla is casual, friendly, and above all, fun. Begin with the diverse and enticing selection of meats and cheeses. While the kitchen assembles the charcuterie, the bar concocts one of three signature sangría options—Classic, Blanca, or De Cerveza—to fill a glass or pitcher. No matter your pick, prepare for the tart sparkle of the fruit-laced cava to ignite the mild spice of chorizo and the nutty tang of Manchego.

After a proper start of meats and cheeses, advance to Executive Chef Luis Quant’s list of small plates. Mandatory order: the Patatas Bravas. This classic Spanish tapa of crispy potato cubes in a spicy brava sauce with aïoli for dipping is a must-try appetizer, the ultimate bar snack, and esteemed escort for Bulla’s lunch sandwiches.

Centurion’s pick for the ultimate gastrobar pairing? “You have to try our Huevos Bulla with a Proper Gin and Tonic. Another favorite is one of our Embutidos (cured meats) like Jamon de Bellota or Chorizo Cantimpalo with a selection of excellent cheeses paired with a good bottle of red wine from our carefully-curated wine list.”

No doubt, this gastrobar is bound to induce flattering chatter as quickly as you can say Bulla!, becoming the talk of the town and a Spanish standby in Miami—and beyond.
