The Village of Merrick Park’s newest eatery Piripi {320 San Lorenzo Avenue, Coral Gables; 305.448.2423} opened its doors in March with a bang. Already, it’s stirring the pot by introducing a brand-new executive chef: Angelina Bastidas.

At only 25 years old, Bastidas has had more than her fair share of culinary experience. She was still a student at Le Cordon Bleu when she began her career at Wish with Marco Ferraro (a Jean-Georges protégée). She then honed her skills in a number of Miami’s top dining destinations before taking on the position of chef de cuisine at South Beach’s popular Tongue & Cheek, where she was selected by Zagat Miami as one of the 30 Under 30 Miami Rock Stars Redefining the Industry.

Just weeks into her new position at Piripi, we had the opportunity to talk with Chef Bastidas about her background, her inspiration, what changes she has in store for the new menus, and even her guilty pleasures.

1. Tell us a bit about your history.
I am originally from the Bronx, but I was raised in Miami and my background is Dominican-Colombian. I have been interested in food since I was a young girl—I grew up with it as part of our family culture. As soon as I graduated high school, I enrolled at Le Cordon Bleu, and after two weeks, I started working in the kitchen at Wish. I’ve also worked at Area 31, The Bazaar by José Andrés, The Biltmore Palme d’Or, and Tongue & Cheek.

2. What drew you to Piripi?
As soon as I heard there was a restaurant opening named Piripi, I was intrigued. To me, it’s a word that perfectly describes Miami (“piripi” is Spanish for “tipsy”). I remember the first time I walked into the restaurant; I was really impressed with the space itself—it’s beautiful and immense—and I guess I felt a little “piripi” myself just walking in the door.

3. Tell us about the new menus. What are some changes you’re making?
We are introducing new brunch, lunch, and kids’ menus, and at some point, a happy hour menu. We have such a great bar, I’d love to see some dishes suited just for dining there. I am also restructuring the dinner menu; there will be a mix of new dishes, plus re-creations of some that are already on the menu. New dishes that I’m excited about are the Chistorra Piripi, the Roasted Beet Salad, and the classic Shrimp al Ajillo. In the future, I also plan on expanding the charcuterie menu, where we can feature housemade meats, torchons, terrines, etc.

4. What is your personal favorite menu item?
My personal favorite has to be the Chistorra Piripi. It’s probably going to be the biggest hit for Piripi yet. It has crispy potatoes, poached egg, and pan-fried chistorra with a Manchego espuma that melts in your mouth!

5. What might surprise visitors about Pirpi if they are coming in for the first time?
I think the first thing guests notice when they walk in has to be the extravagant artwork over the bar. I also think that some of the new dishes and composed plates we are presenting will surprise visitors—even those who are regulars. We are not changing the cuisine, we are reinventing it. At our core, we are still a Spanish restaurant, but we are ready to have fun with our food, with different textures and flavors.

6. How does Miami play a part when creating menu items, selecting ingredients, etc.?
Our location in Miami always defines my menus. I love to embrace what’s local and in season—that’s key to how I create my menus.

7. What Miami chefs or celebrity chefs do you admire?
Florida chefs I admire would have to be Norman Van Aken, Lindsay Autry, and Jeremy Ford. Celebrity chefs I admire are Curtis Duffy, Emeril Lagasse, and Daniel Barber.

8. Do you have a favorite cooking show on TV?
If I had to pick, it would probably have to be “Kitchen Nightmares.” Although it gives me major anxiety, it helps me improve on “cleanliness!”

9. Do you have a favorite food or guilty food pleasure?
My go-to has to be Hershey’s Pie. It relieves me from all the stress I deal with at work.

10. What do you love most about working at Piripi so far?
Working with the Piripi family has been a pleasure. Everyone is committed to doing their best and working as a team. When you’re around great energy, the workflow is just so much smoother.

This year, the Fourth of July falls on a Saturday, which means you have an entire weekend to celebrate (and, perhaps, recover). Here are our picks for the top Fourth of July events in Miami this year.

is known for its wild weekend pool parties, and Saturday, July 4, will be no exception. The fun starts at 11am and will feature guest DJ Michael Woods, who is currently holding down his new residency at LiFE at the SLS Las Vegas.

2. MOB Burger To-Go
If you’ve already been planning your own Fourth of July shindig, consider adding a bit more spice to it by serving burgers prepared by Executive Chef Ralph Colon of Midtown Oyster Bar {3301 Northeast First Avenue, Midtown; 786.220.2070}. The special recipe combines the perfect blend of prime beef, including brisket, short rib, and chuck, blended with a seasoning mix that includes paprika, lemon pepper, brown sugar, cayenne, onion, and garlic powder. Anyone can order a minimum of four 10-ounce patties that can be picked up at the restaurant on the morning of fourth between 10am and noon. You MUST order before Thursday, July 2, at 2pm. The Biltmore Hotel {1200 Anastasia Avenue, Coral Gables}
will once again be hosting its famous annual fireworks extravaganza. But in addition to this brilliant display of lights, you can join in on an entire evening of patriotic fun. The event starts at 5pm when the open bar begins (through 8:30pm), and is then followed by an extravagant Stars and Stripes Barbecue Dinner featuring all your favorite Fourth of July eats like hot dogs, hamburgers, barbecue chicken, and more. But that’s not all! From July 3-5, Biltmore Fontana will serve special breakfast, lunch, and dinner menus that will include barbecue specials created by Italian Chef Beppe Galazzi. Also for the fourth, Palme d’Or at the Biltmore will be offering a special $55 three-course menu (from noon-3pm and 5pm-close), starring American classics with a French twist.

4. Independence Day Night Swim at Delano Beach Club
Get ready for a unique Independence Night at the Delano South Beac {1685 Collins Avenue, Miami Beach; 305.924.4071} for a pop-up swim night and pool party, starting at 7pm. Hosted by YesJulz and DJs Tito, Arlette Carlin, and Dave Sol, sounds will be bouncing off the legendary hotel pool, keeping the party going ’til the early morning. Guests will enjoy grilling in the orchard and ice cream carts, while dancers and models provide in-pool performances with glow-in-the-dark beach balls and floaties up for grabs. 5. An All-American Barbecue, Tamarina-Style

is pulling out all the stops this year with a live band, an endless supply of traditional barbecue staples (including the restaurant’s brand-new, never-before-seen sliders), and unlimited Peroni and Four Roses bourbon. Fifty-six men signed the Declaration of Independence, which inspired the restaurant to offer this special package for just $56.

6. Red, White, and Blue for Two at Oceanaire
The Fourth of July doesn’t necessarily have to be a group holiday. The Oceanaire Seafood Room {900 South Miami Avenue, Brickell; 305.372.8862} is offering a special three-course menu designed for two. Choose from a selection of first, second, and third courses in addition to your choice of bottle of Campanile Friuli Grave Pinot Grigio or 14 Hands Columbia Valley Merlot—all for just $60. If you can’t make it on the Fourth, don’t worry. The menu will be offered from July 1-7.

7. Fourth of July Brunch at Seaspice
Planning on heading out on the water this weekend? Be sure to fuel up first by docking at Seaspice {422 Northwest North River Drive, Miami; 305.440.4200}. And we don’t mean your yacht. On Saturday and Sunday from 11:30am to 3pm, the waterfront restaurant is offering a special Fourth of July seafood-inspired brunch with menu items include Deviled Eggs, Baked Shrimp and Eggs Casserole, Oysters Rockefeller, and a selection of premium caviar.

8. American Social Brickell’s Supersede Group Takeover
What better place to celebrate our nation’s independence than at Miami’s very own red, white, and blue American-themed restaurant and bar, American Social {690 Southwest First Court, Brickell; 305.223.7004}? Join in the fun overlooking the Miami River, with music by the band Locos Por Juana and DJ Spiff. Sip Shanks and Shawarma! On Father’s Day, Cleo is offering an appetizer, lamb shawarma dish, and beer pairing for just $40 per person.

In honor of those dads who like a hearty slab of meat as the basis for their meal, BLT Steak is offering what it calls: WOW! Himalayan sea salt-rubbed, 30-day dry-aged, double-cut, 32oz bone-in, NY Strip Steak for $80. (Try saying that one three times fast!) In addition, the restaurant’s General Manager David Weiss has a created a unique cocktail—the Smoky Martini—just for dads. It’s three ounces Oxley London dry gin, 1/4 ounce of Lagavulin 16-year Scotch whisky, and 1/2 ounce Noilly Prat dry vermouth with a garnish of smoked salmon jerky.

Treat dad to “a real man’s” Father’s Day brunch at Vintro Kitchen. From noon-4pm, the restaurant is hosting an exceptional brunch featuring its world-famous grill. After a delicious meal surrounded by family, he can go enjoy a cigar out on the terrace.

If dad wants to sit back, relax, and slowly drink the day away, take him to L’Echon Brasserie, which is offering a number of inventive “Godfather” cocktails: the Godfather I with Dewar’s, Amarula cream, and hazelnut liquor; the Godfather II with sweet vermouth, cherry liquor, and orange juice; and the Godfather III with Bombay Sapphire, cardamom and pineapple shrub, yellow chartreuse, lemon, and pineapple juice. This Father’s Day, show how much you love dad by taking him to Villa Azur, the South of France-inspired eatery located in the heart of South Beach. Bulla - Miami, Florida

Last month, DiningOut was invited to a special media dinner at Bulla {2500 Ponce de Leon Boulevard, Coral Gables; 305.441.0107}, a unique Spanish-style gastrobar that is consistently cited as one of the best in Miami. Not only were we able to try some amazing dishes, but we learned more about the restaurant’s parent company, Centurion Restaurant Group, and its plans for expansion. There are several projects in the works, including a new Peruvian concept called Pisco y Nazca, slated to open at Town & Country in Kendall this August, along with second locations of both Bulla and Pisco y Nazca at the brand-new Shops at Downtown Doral in 2016.

We had a chance to sit down with Bulla’s Executive Chef Diego Solano, who joined Bulla in June 2014, to talk about the restaurant’s concept, menu, what’s in store for the future, and more.

What drew you to Bulla?
Much like those famous gastrobars in Spain, the bar at Bulla is the center of attention; but the emphasis on quality gastronomic creations is what drew me the most! Bulla (pronounced boo-ya), is slang for “chatter” or what people are talking about. It is devoted to delighting you by serving your favorite Spanish and Catalan dishes.

You went to Spain with Carlos Centurion and Juan Carlos Marchan [the top executives of Centurion Restaurant Group] when you were first hired. How did this change your culinary philosophy or techniques?
It definitely enriched my culinary experience. Spain is known for its inventive dishes that combine various ingredients. I was able to taste a variety of Spanish cuisine staples, from paella to tapas. I was exposed to the best chefs and had the opportunity to observe their cooking techniques, which has helped me create our menu.

How does your Costa Rican background influence your menu and style of cooking?
Tico cuisine incorporates several staples of Latin American cuisine, but differentiates itself by being much healthier with the inclusion of an array of fresh fruits and vegetables. This makes me strive to search for seasonal and quality products to ensure I deliver all of our menu items with excellent flavor and freshness.

Tell us about the weekly market menu. How do you come up with the dishes every week?
We want to take our guests on a gastronomic journey that fuses new flavors beyond our daily menu. Our weekly menu focuses on of-the-moment ingredients that revive and rethink classic Spanish dishes for the Miami palate. Every Tuesday, we carefully curate a menu, creating and tasting recipes, and reviewing the balance of the plate, presentation, and flavor. The menu is designed to be creative with the use of fresh elements and food trends, ultimately lending to an outstanding culinary experience.

Diners can expect items such as Zarzuela de Mariscos, a seafood stew with clams, shrimp, mussels, monkfish, calamari sofrito, pine nut, picada, and white wine (pictured above); Solomillo con Polenta with filet mignon, polenta fries, portobello mushrooms, and Port reduction; and Panna Cotta de Miel y Yogurt, a honey and Greek yogurt panna cotta made of citrus sponge cake, lychee foam, and organic honey. Additionally, the house mixologist revs up for a new cocktail each week.

What might surprise new visitors about the menu at Bulla?
We are not your standard restaurant; we are proud to describe ourselves as a gastrobar that features a large variety of tapas and a full bar, allowing us to bring the flavors of Spain to the Coral Gables community. We are proud to be listed in top 10 as one of the most vibrant bars in all of Miami.

What would you recommend to first-timers?
Huevos Bulla (pictured above) is definitely a must for first-time guests. This dish is prepared with homemade potato chips, Serrano ham, potato foam, and truffle oil.

What can you tell us about Centurion Restaurant Group’s new concept, Pisco y Nazca?
Pisco y Nazca Ceviche Gastrobar is a chef-driven concept that will serve authentic Peruvian dishes in a fun and casual setting designed by Celano Design Studio (responsible for Bulla and STK in Las Vegas and Miami). The menu will feature a variety of dishes paired with an innovative beverage program with 100 types of artisanal crafted beers and handcrafted liquor cocktails–the first of its kind in Miami. With Miguel Gomez, one of the best Peruvian chefs in the U.S., at the helm, paired with the expertise of the Bulla Group, we have no doubt this will be a hit.

Still no reservations for Mother’s Day? No problem! We founded up our favorite places for both brunch and spa, but many more options for Mother’s Day dining in Miami exist. Since there’s never too many ways we can celebrate Mom this year, below are a few more places in Miami offering specials on Sunday, May 10.

As Coconut Grove’s favorite waterfront restaurant, you can’t really go wrong by booking your family’s Mother’s Day brunch here. Expect to find Maine Lobster Tartare with avocado, tomatoes, lemon dressing, and Tradition caviar; Risotto with Champagne, scallops, zucchini, and Tradition caviar; Seared Beef Filet Mignon wrapped in prosciutto with purple mashed potatoes, asparagus, and a truffle demi-glace sauce (pictured above); and a Coconut Millefoglie with a blackberry sorbet for dessert.

Celebrate Mom at the Village of Merrick Park with the shopping center’s newest restaurant. Enjoy a convivial journey across Spain with traditional dishes through Chef Najat Kanaache’s creative lens. In addition to homespun regional favorites, Chef Najat is offering all moms a complimentary dessert: Mil Hojas, Catalan cream with mango purée. Keep the day alive by taking Mom for a little post-brunch shopping spree. You know she deserves it.

For its first year open for Mother’s Day, Siena Tavern will be offering a special prix-fixe menu, which was inspired by Chef Fabio Viviani’s own mother. Start off with the Heirloom Tomato Salad with grilled asparagus tips, Gorgonzola dolce, Marcona almond vinaigrette, and white balsamic; next, enjoy the pan-seared halibut with artichoke caponata, pea shoots, sea salt, and grilled lemon. For dessert, indulge in the Meyer Lemon and Blueberry Bread Pudding with candied pistachio and toasted marshmallow. The specialty cocktail of the day will be the Spring Spritz, a combination of Grey Goose le Melon, aperol, pink grapefruit, and lemon.

Not only will this Coral Gables gem be offering an expansive brunch featuring huevos rotos, eggs Benedict, goat cheese with langoustines, and more (all for just $39 per person), but the restaurant is featuring a special four-course prix-fixe menu featuring its unique “Cochinillo a la Leña” suckling pig (pictured above) roasted in a traditional wood-fired oven brought from Spain.
